Thai Baked Yellow Chicken Curry

I try to come up with recipes that use the same ingredients, but make two flavors or two different dishes. This was one package of chicken thighs (about six, boneless, skinless thighs) and one can of coconut milk. I ended up making Yellow Chicken Curry and an Indian Style Coconut Milk chicken thighs.

I love that it’s baked, which means not only is it hands off, but the coconut milk makes an easy small amount of sauce with which to baste the chicken. Definitely, an easy, flavorful meal to make.

What Do I Eat With Thai Baked Yellow Chicken Curry?

You can serve Yellow Chicken Curry over rice or noodles to complete the meal. If you’re trying to stick to low-carb you can use a low-carb noodle, or riced cauliflower instead of traditional rice. Either way, you’re going to love the flavor profiles in this and how easily it comes together!

What Does Thai Yellow Curry Taste Like?

Thai Yellow Curry has a fairly mild flavor. The turmeric in the curry paste gives it a slightly sweet flavor with a hint of spice.

Is Yellow Curry Healthy?

Yellow curry paste is a mixture of ingredients. One of those is Turmeric. Turmeric is known for it’s anti-inflammatory and antioxidant benefits.

On top of this recipe having turmeric, it’s also low carb. Really, there’s no reason not to give it a try.

Ingredients

  • ▢ 1 pound Boneless Skinless Chicken Thighs
  • ▢ 2 tablespoons Thai yellow curry paste
  • ▢ 1/2 cup Full-Fat Coconut Milk
  • ▢ 3 cloves Garlic
  • ▢ 2 teaspoons Minced Ginger
  • ▢ 1/8 cup crushed peanuts for topping , (optional)

Instructions

  • n a quart ziplock bag put in the chicken, followed by all the other ingredients.
  • Zip the top of the bag securely and then start smooshing all the ingredients together until well mixed.
  • Let the bag rest overnight or at least an hour to let the flavors meld.
  • Heat oven to 425 degrees. Put the chicken and the sauce in a pie pan.
  • Cook for 20 minutes or until internal temperature reaches 165 degrees.
  • I served this with roasted cauliflower that I cooked at the same time, and in a separate pan I also made Indian-style Chicken thighs so that I had two different flavors of chicken to serve.

  • Almond Butter - Creates a deliciously creamy touch when mixed with melted chocolate chips.
  • Sugar-Free Chocolate Chips - A smooth, low carb-friendly chocolate blends well with the creamy almond butter.

How To Make Chocolate Fat Bombs

I’m not sure this recipe could get much easier. Short of going to the grocery store and buying an overpriced version, it just doesn’t get any easier than this.

  1. Put all of the ingredients in a microwave-safe cup and microwave for 1 minute.
  2. Remove and stir.
  3. Keep doing this until the ingredients are mixed well, heating for 1 min at a time.
  4. Line a muffin pan with paper cups. This is to prevent sticking and allow for easy removal after the chocolate fat bombs are chilled.
  5. Pour the liquid into 12 muffin cups or 24 mini muffin cups.
  6. Put the muffin pan in the freezer and allow it to set for several hours.
  7. Remove from the freezer as needed for a snack, and enjoy!

Variations

I shared the Chocolate Fat Bomb recipe with some friends on a WLS group on Facebook, and before you know it, several of us were trying our hand at them. Here are some variations.

  • Erin put some cranberries in hers. I tasted one of the bombs with cranberries and they were so good!
  • Barb tried hers with a few little twists. Here’s what she did : “Just made a batch with a little change-up. I used your proportions of coconut oil and almond butter. I used some melted s/f chips, 2 tablespoons of Splenda brown sugar. I also added a splash of cold coffee which really enhances the chocolate flavor. Those babies are in the freezer now. I used the mini pan and made 12… Now we wait!”
  • I decided I wanted mine with a little peanut butter on top. Next time I may add a few almonds for extra texture and variety.

How Long Do They Last?

If you have a decent amount of self-control, these chocolate fat bombs will last 1-2 weeks when stored in an airtight container in the refrigerator.

If you’re making a double or triple batch to keep a sweet treat on hand at all times, you can store these almond butter cups in the freezer for up to 6 months. Just pop one out and give it a few minutes to defrost before digging in.
