What Ingredients Do You Need For This Pecan Chicken Recipe?

  • Chicken tenders
  • Kosher Salt
  • Ground Black Pepper
  • Smoked Paprika
  • Coarse-Ground Mustard
  • Sugar-Free Maple Syrup
  • finely-crushed pecans

A keto diet doesn’t mean you have to give up on everything breaded. This Pecan Crusted Chicken recipe is a prime example of that. Simply sub out a high-carb breading with something like pecans and you’re in business. Deliciously crispy, low carb, and delightfully nutty.

It makes this Pecan Crusted Chicken recipe just as crunchy as a deep fryer would without all the unnecessary fat and oiliness. Not to mention it makes this recipe faster! No long oven bake times or smelly deep fryer oil smells here.

Now when I originally made these I used honey to get the mustard sweeter, and of course, you can definitely do that if you’d like. But if you’re trying to make these low carb, I find that a sugar-free maple syrup is just the ticket. it lends a delicious, maple-y flavor, it’s thick enough to help the coating stick, and it all just works beautifully together.

How To Make Pecan Crusted Chicken

  1. Place the chicken tenders in a large bowl.
  2. Add salt, pepper, and smoked paprika. Mix until the chicken is coated with the spices.
  3. Pour in honey and mustard and coat the chicken.
  4. Place the finely-crushed pecans on a plate.
  5. One chicken tender at a time, roll the tenders into the crushed pecans until both sides are coated. Shake off any excess.
  6. Continue until all tenders are coated and place them in a single layer in the air fryer basket.
  7. Set the air fryer to 350F for 12 minutes until the chicken is cooked through and the pecans are golden brown.

Tips And Tricks

  • For this recipe, you want the nuts crushed fine, but not utterly powdered. The finer they are chopped, the more likely they are to stick to the mustard mixture.
  • If you find yourself getting annoyed by nuts that just won’t stay put, just chop them a little bit more and you should be good to go.

This is also a great side dish recipe for barbecues or family get-togethers over the summer. The dressing in this makes the apple and zucchini salad come together beautifully.

Can You Eat Zucchini Raw In A Salad?

Not only can you eat zucchini raw, but it’s also the most delicious that way (in my opinion, of course). It has a wonderfully crisp, fresh bite in this cold zucchini salad with apple.

Can You Eat The Skin Of A Zucchini?

Whether you eat the skin of zucchini or not depends on a couple of different factors.

  • Is it waxed? Some zucchini has waxed skin to help preserve its shelf life. If yours is waxed, you will probably want to remove it.
  • How big is it? The larger the zucchini, the more bitter the skin. To avoid a bitter flavor in your zucchini apple salad , you may opt to peel it.
  • What are you using it for? Zucchini takes on the flavor of dressings and sauces easily. If you’re wanting to intensify the flavor of your dish, consider removing the skin.

How To Make Apple Zucchini Salad

  1. Mix. In a glass jar with a lid, mix together oil, vinegar, sweetener, salt, pepper and chopped mint leaves. Close the lid and shake it well together to emulsify the dressing. You can also do this in a small bowl with a whisk.
  2. Rest. Let the dressing rest while you prepare the vegetables.
  3. Cut. Either julienne or use this spiralizer or KitchenAid attachment to spiralize the vegetables and place them in a bowl.
  4. Dress . Pour the dressing on the vegetables and toss the salad. This zucchini salad is best served fresh, but it will also keep in the refrigerator for a day or two.

Is This Apple Zucchini Salad A Dessert Or AnActualSalad?

I’ve found apple salad recipes before that include lots of sugar and heavy dressings. This turns out like more of a dessert, and people just call it a salad.

My recipe for Apple Zucchini Salad is actually a salad and can be enjoyed year-round guilt-free. This salad does have a dressing, but it’s not at all full of sugar and heavy ingredients.

The dressing for this is just a few ingredients but contains a fresh mint that makes a world of difference in the flavor. Both apple and zucchini are very porous fruits and absorb the flavors around them, so they soak in this dressing and make the whole dish delicious.

Why Apple and Zucchini And Not Just Apple?

At first glance, you may think that Apple Zucchini Salad might be weird, especially given that I’m asking you to add mint to it. It’s not weird. In fact, apples and zucchini work so well together that you may not be able to tell when you’re eating an apple or when you’re eating zucchini in this Apple Zucchini Salad recipe .

Is This ALow CarbFruit Salad?

Even though apples are an incredible source of healthy sugar, they’re still fairly high in carbs. For instance, one medium apple has about 25 total carbs, whereas one medium zucchini only has about 6 total carbs.

I chose to include zucchini in this salad to reduce the number of carbs per serving while still maintaining the delicious sweetness of the apples.

Even with the reduced carbs from the addition of zucchini, you still want to eat this in moderation if you’re living a Keto lifestyle .

For the Dressing

  • ▢ 1/4 cup ( 54 ml ) Olive Oil
  • ▢ 1/4 cup ( 59.75 ml ) Red Wine Vinegar
  • ▢ 1 packet ( 1 packet ) Splenda , or 2 teaspoons sugar
  • ▢ 1/2 teaspoon ( 0.5 teaspoon ) Kosher Salt
  • ▢ 1/2 teaspoon ( 0.5 teaspoon ) Ground Black Pepper
  • ▢ 1 tablespoon ( 1 tablespoon ) mint leaves , chopped

For the Salad

  • ▢ 2 cups ( 250 g ) apples , julienned
  • ▢ 1 cup ( 124 g ) Zucchini , julienned
  • ▢ 1 cup ( 113 g ) Yellow Summer Squash , julienned
  • ▢ walnuts , toasted for garnish (optional)

Instructions

  • In a glass jar with a lid, mix together oil, vinegar, sweetener, salt, pepper and chopped mint leaves. Close the lid and shake it well together to emulsify the dressing.
