Like many foods, deciding whether pumpkin is keto or not all depends on your personal macros. Pumpkin puree contains 7 net carbs per half-cup serving. So, If eaten in moderation, it certainly can be part of a low carb lifestyle.
How Many Carbs Are In A Keto Cheesecake?
This Keto Pumpkin Cheesecake uses just enough pumpkin to give it the flavor you’re craving without adding too many carbs to the recipe. Each creamy slice will have 5 net carbs.
Ingredients You’ll Need
- Cream Cheese- This will make up a majority of the “body of the cheesecake”
- Swerve - Keeps the pumpkin dessert low carb while perfectly sweet.
- Pumpkin Spice
- Pumpkin Puree - You can’t have a pumpkin cheesecake without the pumpkin!
- Vanilla Extract
- Sour Cream - Makes the cheesecake extra creamy and prevents it from becoming overly dense.
- Eggs - Helps thicken it while creating a fluffy and airy texture.
How To Make Keto Pumpkin Cheesecake
- Allow all ingredients to come to room temperature.
- Add all of the ingredients, except the eggs into a blender.
- Once a creamy blend is achieved, add the eggs and blend until well incorporated.
- Completely line a springform pan with parchment paper.
- Pour the contents of the blender into the springform pan and cover it with foil.
- Place a trivet inside the Instant Pot liner and place the springform pan on top of the trivet.
- Add water to the Instant Pot liner.
- Close the Instant Pot lid and cook under high pressure.
- Allow the pressure to naturally release for 10 minutes and then quickly release all remaining pressure.
- Remove the springform pan from the Instant Pot and place it directly in the refrigerator until chilled.
- Once the cheesecake is cooled completely, remove the springform pan and parchment paper and garnish as desired.

Tips and Tricks
- Line the springform pan. While a nonstick springform pan prevents the cheesecake from sticking, it won’t make the cheesecake “pretty.” Since there isn’t a frosting or glaze for this recipe to hide any imperfections, any help with appearance makes a huge difference.
- Don’t overbeat the eggs. Incorporate the eggs well in the second part of the blending process, but do not blend too much. Over beating the eggs will cause the cheesecake to become lumpy when cooking and give the cheesecake an eggy flavor.
- Tap the pan before cooking. After pouring the cheesecake mixture into the springform pan, gently tap the bottom of the pan against the counter about 15 times to cause any air bubbles in the batter to rise to the top and prevent the center of the cheesecake from falling.
- Don’t skip the foil. Covering the top of the Keto Pumpkin Cheesecake before cooking will keep any additional moisture from settling on top and creating a “skin” on the top.
How Long Does It Last?
For the best bite, I would suggest enjoying this Keto Pumpkin Cheesecake within 3-4 days after preparing it.
While it will stay tasty and safe to eat several days after this, the moisture content of the sour cream, cream cheese, and pumpkin puree will cause the cheesecake to begin to separate and change the overall texture.

- High Protein . I’ve been craving sweets lately which is a very slippery slope for me. But it’s also time to put together some healthy treats so I thought I’d try this very simple recipe. Not bad for 20 grams of protein !
- Low Calorie. Much better than a protein bar in that sense and a lot fewer calories. It would also make a great snack or meal during the soft food and full liquids stage of sleeve-surgery recovery.
- Variety. What I love about it is that I can use a variety of flavors of Jello, and it all works well. Above you see a photo of a sugar-free cherry Jello recipe. Below, I use orange jello to get a creamsicle like flavor.

While typical store-bought whipped cream, like Cool Whip, is full of sugar, you can make your own delicious whipped cream at home that’s Keto-friendly.
To make your own Keto-friendly whipped cream, simply use an electric mixer to whip heavy whipping cream (HWC) until it forms stiff peaks.
If you want it to be sweeter, you can use a bit of powdered Swerve to taste before mixing.

- Add the jello mix to the water and let it sit while you gather the other ingredients.
- Dump the remaining ingredients into the bowl.
- Blend the ingredients for the keto jello dessert together until smooth.
- Pour the mixture into 4 ramekins and allow it to set.
- After allowing them to set, enjoy!

- Patience. The most important thing about getting this jello mousse recipe right is to be patient and make absolutely sure the gelatin is completely dissolved in the water before you start. If you don’t do this, you will have granules in your mousse and that will impact the texture of your bite.
- Whisk. Use a flat silicone whisk or a hand blender to aerate this mousse as much as possible for a light and fluffy bite.
- Variety. Vary the flavors to get different desserts. In the images above, I used an orange jello, but I love the flavor of strawberry or cherry to create a lovely pink mousse.
- Blend well. Blend for plenty of time to aerate the dessert and get a light, airy, mousse-like texture. If it doesn’t feel like it’s fluffy enough, give the blending a bit longer and it will come together.
How Long Does It Last?
Since this sugar free Jello mousse is homemade, it should be stored in an airtight container in the refrigerator and consumed within 3-5 days.

Equipment
- Silicone Whisk

Ingredients
- ▢ 1 small box sugar free Black Cherry Jello
- ▢ 1 cup Water
- ▢ 10 oz Full-Fat Greek Yogurt
- ▢ 1 scoops NOW unflavored whey , (or any other unflavored protein powder)
Instructions
- Heat water until it’s warm but not boiling.
- In a mixing bowl, empty sugar-free jello mix and pour the water over it and let it sit while you get the other ingredients organized.
- Now my usual sophisticated cooking technique–which is to say, dump everything into that mixing bowl. Blend until smooth.
- Pour into 4 ramekins and let it set.
