Many of us like meatloaf but won’t admit this widely. I have no shame about loving meatloaf at all—I just can’t use breadcrumbs in mine.

I also can’t make a sugar-laden ketchup glaze for the top since I prefer to keep things low carb. We all know that meatloaf without a meatloaf topping isn’t quite making the grade.

In this recipe, I ask you to use a little tomato paste (not ketchup) for both the meatloaf sauce and the keto meatloaf . Not only does this taste good, but it keeps you from wasting most of a can of perfectly good tomato paste.

I didn’t use a loaf pan . I don’t know about you, but I hate scrubbing a loaf pan after baking things. Fewer dishes, more time for eating.

What Can I Use In Keto Meatloaf Instead Of Breadcrumbs?

I opted to use almond flour in this recipe, and the final product comes out as a fantastic gluten-free meatloaf. It’s every bit as good as a non-keto meatloaf, and maybe even a little bit better, but I might be a little bit biased.

This isn’t another one of those keto recipes that uses pork rinds instead of regular flour. Thank goodness it’s not one of those. If you’ve been on a keto or low carb diet for any period of time, I’m sure you’re tired of seeing pork rinds in everything.

Ingredients You’ll Need To Make Keto Meatloaf

For The Meatloaf

  • Lean Ground Beef
  • Eggs
  • Superfine Almond Flour
  • Half and Half
  • omato Paste
  • Worcestershire Sauce
  • Onion Powder
  • Garlic Powder
  • Kosher Salt
  • Ground Black Pepper

For The Glaze

  • Tomato Paste
  • Stevia
  • hot water
  • Dijon mustard

How To Make Keto Meatloaf

  1. Preheat oven to 350F
  2. In a large bowl , mix together ground beef, egg, almond flour, half and half, tomato paste, Worcestershire sauce, onion powder, garlic powder, salt, and pepper. You will get a loose mixture.
  3. Form into four individual mini meatloaves. Place a grill rack on to a sheet pan or in a square baking dish (Skip the loaf pan for this recipe). Place the meatloaves on top of this so that the grease can drip down into the baking sheet. If you don’t have fancy contraptions like grill racks that fit into baking pans, don’t worry about it.
  4. Bake at 350F for 20 minutes.
  5. Meanwhile, make the glaze: Mix together tomato paste, water, Stevia, and Dijon mustard and set aside.
  6. Remove the meatloaves from the oven and turn on the broiler. Move the oven rack about 6 inches away from the broiling element.
  7. Cover the tops of the meatloaves with the glaze. Broil for 5-6 minutes and check temperature for meatloaf doneness by using a thermometer inserted into the meatloaves. I should register at least 145F for the internal temperature. The glaze should be browned a little. Serve hot.

Tips And Tricks For Making This Low Carb Meatloaf Recipe

  • You can double this recipe as easily as you can halve it.
  • You could also scoop the low carb meatloaf mixture into muffin tins and bake them as keto meatloaf muffins . In this case, you will likely only need to cook them for 15 minutes or so.

  • ▢ 1 teaspoon Smoked Paprika
  • ▢ 1 teaspoon Kosher Salt
  • ▢ 1 teaspoon Garam Masala
  • ▢ 1 teaspoon Ground Cumin

  • Take out half the sauce and freeze for later or store in the fridge for 2-3 days
  • Add the chicken back in and heat through. Add the remaining cilantro and garam masala and mix. Break it up into smaller pieces if you need but don’t shred it.
  • Serve over rice or zucchini noodles

  • Use leftover cooked chicken and mix in with the gently heated sauce, let it simmer for a few for the flavors to meld together and there you go. Add some fresh cilantro on top.
  • You could also use this for Paneer Makhani. Defrost a cup of peas and 1 cup of paneer and mix gently into the heated sauce and let it simmer for a few for the flavors to meld together and there you go.
