I won’t do it and then it will be time to make ice cream and I’ll be about half a day away from having it. So I had to find something that worked without a custard.
The low carb Ice Cream recipe I settled on is borrowed heavily from the Serious Eats Ice Cream recipe with only one minor tweak, which was my addition of xanthan gum, and a sugar-free sweetener.
Not only was this tasty, but I got two different textures from one recipe. When freshly made, the Low Carb Ice Cream is like a soft serve, and very creamy. Once it’s cured for a bit, it’s a lot more like regular ice cream. Two different tastes from the same recipe make it fun.

Heck yeah, it is. Of course, I’m a little biased since this is my recipe. But I have trouble keeping it in my freezer without even my non-Keto friends stealing a bite.

- ▢ 1/3 cup ( 0.33 g ) Truvia
- ▢ 2 tablespoons ( 2 tablespoons ) Whole Milk Powder
- ▢ 1/4 teaspoon ( 0.25 teaspoon ) Xanthan Gum
- ▢ 1-2 teaspoons ( 1 teaspoons ) vanilla extract
Instructions
- Mix together sweetener, dry milk powder, and xanthum gum, and whisk well to avoid lumps.
- Pour in the milk, cream, and vanilla extract and mix until the sweetener is dissolved.
- Pour into ice cream maker and churn until set.

I personally prefer a hearty marinara sauce. I have an amazing keto pizza sauce recipe that pairs with these beautifully.
However, marinara isn’t the only thing that goes well with these toasted ravioli. They are also tasty dipped in alfredo sauce, pesto, and even melted butter with fresh basil and oregano.
How To Make Frozen Ravioli In Your Air Fryer
Unfortunately, using the egg and panko coating on frozen ravioli doesn’t work, so to use frozen ravioli, you have two different options:
- Let your frozen ravioli defrost for around 45 minutes or just toss them in a pan of boiling hot water to cook until soft. Then cook as directed above.
- Use pre battered ravioli and cook them in the air fryer.
To Make Pre Battered Frozen Ravioli
- Place the ravioli in a single layer in the air fryer basket
- Cook at 375F for 15 minutes
- Flip your ravioli and cook for an additional 5-7 minutes
- Serve with your favorite dipping sauce

- Use refrigerated, not frozen. I prefer the texture of pasta that hasn’t been frozen and they are much quicker to prepare.
- Get creative. Feel free to use Italian seasoned bread crumbs or even crushed pork rinds to bread the ravioli.
