There are days when I make fancy food, and there are days when I just need to get dinner on the table with minimal fuss.
This pressure cooker Hamburger Stew is one of those super easy ground beef recipes for those days when I need to cook quickly–but I also forgot to shop for anything. So what I end up doing is defrosting some ground beef and scrounging around in the freezer to see what vegetables I have lying around.
This time when I made this Keto hamburger soup , I happened to have carrots, corn, and okra, which work really well together in this stew. But you could also use a package of frozen mixed vegetables and call it a day.
I haven’t had much luck making Hamburger Stew with cauliflower, which disintegrates, and broccoli, which overcooks within that time frame. But other than that, I throw in whatever is lying around and it works.
Is This Really Keto Beef Stew?
You know I love to cook Keto recipes . But, just because this recipe can be made Keto-friendly, doesn’t mean you need to avoid it if you’re not following a Keto way of eating. This is one of those recipes with ground beef you can keep in your arsenal when you’re looking for things to cook.
To make this a purely Keto recipe :
- Corn. Omit the corn, or lessen the amount to half a cup and replace it with other vegetables like green beans etc
- Carrots. Omit the carrots, or reduce the amount to half a cup and replace them with a more Keto-friendly vegetable .
How To Make Hamburger Stew In Your Instant Pot
- Saute. Turn the Instant Pot on to Sauté and when hot, add the hamburger meat. Break up any clumps and allow to cook for about 2-3 minutes. You do not need to brown the food, as the Maillard reaction in the pressure cooker will take care of this for you.
- Ingredients. Put in all remaining ingredients except for lemon juice.
- Cook. Cook on high pressure for 5 minutes and allow it to release pressure naturally for 10 minutes. Release all remaining pressure.
- Serve. Stir in fresh lemon juice and serve.
What Can I Substitute For Potatoes In Stew?
The answer is easier than you would think. Just exchange potatoes for some keto-friendly veggies! Grab some cauliflower, broccoli, green beans, or asparagus for a great low carb filler.

- Cruciferous. Try to stay away from cruciferous vegetables such as broccoli or cauliflower that will cook down to mush, but corn , carrots , green beans , okra , onion , etc. all do well in this recipe.
- Lemon Juice. Use the lemon juice last. It is for the okra to reduce the stickiness that comes from cooking okra.
- Extra Liquid. There is enough liquid in the vegetables and meat that I don’t use any extra liquid. It is easier to put a splash of water or stock in than to have to wait for the Instant Pot to reduce it on the saute method.

It’s even better than regular lasagna, in my opinion. There’s no need to fill up on the flavorless noodles when you can enjoy a flavor-packed bite of meat and cheese with every bite.
Can You Have Ricotta Cheese On Keto?
At 7 carbs per cup of ricotta, it is higher in carbs than some other cheese you may be eating with your low-carb lifestyle.
However, this recipe only uses one cup spread across 4 servings so the carbs from the ricotta cheese should still be well within your daily macros.
Does This Low Carb Lasagna Use Zucchini?

Ingredients You’ll Need For Skillet Lasagna
For The Meat Layer
- Extra Virgin Olive Oil
- Lean Ground Beef
- Celery
- Red Onion
- Garlic
- Low-Sugar Marinara
For The Cheese Layer
- Ricotta Cheese
- Mozzarella Cheese
- Parmesan Cheese
- Eggs
- Italian Seasoning
- Garlic
- Garlic Powder
- Black Pepper
How To Make Keto Skillet Lasagna
For The Meat Layer
- Heat oil in the skillet and add aeromatics and ground beef.
- Gently break up the ground beef with a spatula until it is no longer pink.
- Stir in marinara sauce along with salt and pepper. Allow this to simmer while preparing the cheese layer.
For The Cheese Layer
- Stir together ricotta cheese, half of mozzarella cheese, parmesan cheese, eggs, and spices in a large bowl.
Once both layers are prepared, top the meat layer already in the skillet with the cheese layer.
Sprinkle with remaining mozzarella cheese, cover, and bake.
After baking, briefly broil the Skillet Lasagna for a lightly browned and bubbly dish.
Allow the pan to stand for about 10 minutes before serving.
How Long Does It Last?
For best results, eat any leftovers you may have within 3-4 days of initially preparing this lasagna recipe.
While it may still be safe to eat after a few days have passed, the marinara sauce and cheese layer will begin to separate, leaving a less than tasty dish than you started out with.

Ingredients
For The Meat Layer
- ▢ 1 tsp extra virgin olive oil
- ▢ 1 pound lean ground beef
- ▢ 1/4 cup diced celery
- ▢ 1 cup diced red onion
- ▢ 1 clove garlic
- ▢ 1/2 cup Low Sugar Marinara Sauce
- ▢ 1 tsp kosher salt
- ▢ 1 tsp black pepper
For The Cheese Layer
- ▢ 8 ounces ricotta cheese
- ▢ 1 cup mozzarella cheese
- ▢ 1/2 cup parmesan cheese
- ▢ 2 eggs
- ▢ 1 tsp Italian seasoning
- ▢ 1/2 tsp minced garlic
- ▢ 1/2 tsp garlic powder
- ▢ 1/2 tsp black pepper
Instructions
For The Meat Layer
- Heat an ovenproof skillet over medium-high heat and add oil.
- Once the oil is hot, add the ground beef, celery, onion, and garlic.
- Cooks the ground beef, breaking it up with a wooden spoon until no longer pink. This should take around 5-6 minutes.
For The Cheese Layer
- In a large bowl, stir together the ricotta, half of the mozzarella, the parmesan, eggs, italian seasoning, minced garlic, garlic powder, and pepper.
- Spread the cheese mixture over the top of the meat mixture.
- Sprinkle with the remaining mozzarella cheese.
- Cover and cook on medium-low heat until the cheese is hot and cooked through. This should take 15-20 minutes.
- Meanwhile, preheat the broiler. Broil the lasagna until the top is browned. About 2-3 minutes.
- Allow to stand for 10 minutes before serving.
