Unfortunately, no. I absolutely adore corn tortillas and how much flavor and texture they add to a dish–especially enchiladas. Unfortunately, they are made with corn flour and it is not keto-friendly.
If you’re only monitoring your carbohydrate intake and not concerned about the ingredients being consumed, corn tortillas can be considered low carb if consumed in moderation. One corn tortilla has approximately 9 net carbs per serving.
How Many Net Carbs Are In Enchiladas?
Chicken Enchiladas aren’t the most high carb dish you could choose if you weren’t watching your carbohydrate intake, but they’re far from keto-friendly. One traditional chicken enchilada packs around 25 net carbs.
Just one enchilada would put you above a daily goal of 20 carbs all in a few tasty bites. Instead of splurging on a few tasty bites made with the wrong ingredients, enjoy a larger portion made with a few low carb ingredients to stick to your dietary lifestyle choices.
Is Sour Cream Keto?
Yes! Not only is sour cream keto-friendly, it’s actually extremely versatile and used in a many low carb dishes.
Since it is low in carbohydrates and high in fat, it helps to temper hunger while adding flavor and a creamy texture to many of your favorite foods.
As with any other keto-friendly food, it needs to be enjoyed sparingly. However, with a little over 1 gram of carbs per serving, it can still be easily incorporated into your favorite meals.

At first glance, this list of ingredients may seem pretty long. Rest assured that two of the ingredients are used in both the filling of the enchiladas and the sauce and four of the ingredients are spices that you likely already have in your spice rack.

How Long Do They Last?
Keto Enchiladas are great for feeding a family because they’re both filling and delicious. unfortunately, if you’re only feeding one or two people, you may have leftovers. If this applies to you, you may consider halving the recipe.
While these Chicken Enchiladas with White Sauce are still incredibly delicious when reheated the next day, the longer the tortillas sit in the sauce, the soggier they become.
When stored in an airtight container in the refrigerator you can expect these low carb enchiladas to last up to 3 days.
Can You Freeze Them?
To freeze them successfully, assemble the enchiladas as usual, but hold off on adding the sauce directly over top. Excess moisture can cause the low carb tortillas to soften too much after thawing.
Wrap the dish tightly in plastic wrap followed by aluminum foil, or freeze individual portions for easy reheating later.

What Is In This Keto Apple Pie Filling?
So, if you know anything about a low carb lifestyle, you probably know that apples aren’t keto-friendly. So you may be asking yourself what could possibly be in this Keto Apple Pie Filling .
Most people would assume it’s zucchini (because zucchini seems to be used for everything on a low carb diet). Nope, it’s not zucchini.
It’s…get ready for it…EGGPLANT. Yes, eggplant.
Who makes a pie out of eggplant? Me, that’s who.
- Eggplant - this is the “apple” in this crustless apple pie recipe
- Truvia - makes it perfectly sweet
- Butter - helps the apple pie spice stick to the eggplant and adds richness and additional depth of flavor.
- Xanthan Gum - is used to thicken the “sauce”
- Apple Pie Spice - tricks your brain into believing this is actually apple pie filling
- Whipped Cream - used to top the seasoned eggplant and serve in a traditional fashion
Does Eggplant Taste Like Apples?
Well, that all depends on how you cook it. If you simmer it down, add sweetener, add apple pie spice, and then thicken it, it totally tastes like apples.
Seriously. This tastes like apple pie filling. I asked people in my Keto Twosleevers group (a group you should join by the way) to taste test it. I asked them to feed it to unsuspecting members of their family.
And the consensus was quite clear–it tastes like apple pie filling.
But, it’s a Keto Apple Pie . It’s a sugar-free apple pie .
It’s apple pie without any apples.
How genius is that??

How To Make Crustless Apple Pie
This isn’t one of those low-carb desserts that take 100 different steps and hours of chilling before you can enjoy it. It is so quick and easy to make you’ll be reaching for it again and again.
- Peel the eggplant. Once it is completely peeled, chop it into equal sized pieces.
- Add butter, eggplant, stevia and water in a saucepan. Cover and cook until the eggplant is cooked through.
- Mix in apple pie spice and xanthan gum and stir. Allow everything to cook and thicken.
- Serve with whipped cream. Don’t skip this step. You’ll thank me later.

- DO NOT SKIP THE WHIPPED CREAM. I don’t know why, but the cream makes a huge difference to this recipe.
What To Serve It With
Do you really need the whipped cream? Well I mean. I ALWAYS need whipped cream!
But yes, for this recipe, I think you definitely need the whipped cream. It hides any remaining eggplant taste and it’s just a perfect complement.

Depending on how many carbs you allow yourself, you can also serve it with this PLAIN GREEK YOGURT.

How Long Does It Last?
Once it is cooked, eggplant generally stays safe to eat in the refrigerator for 3 to 5 days. Any amount of time beyond this, the eggplant will begin to change in texture and may not be as delicious as the day you made it.

Keto Apple Pie | Sugar-Free Mock Apple Pie
Equipment
- 12 inch Skillet
- SILICONE SPATULA TURNER

Ingredients
- ▢ 4 cups ( 328 g ) Chopped, Peeled Eggplant
- ▢ 1/4 cup ( 0.25 g ) Truvia
- ▢ 3 tablespoons ( 3 tablespoons ) Butter
- ▢ 1/2 teaspoon ( 0.5 teaspoon ) Xanthan Gum
- ▢ 2-3 teaspoons ( 2 teaspoons ) Apple Pie Spice
- ▢ 1/2-3/4 cup ( 125 g ) Water
- ▢ 1/2 cup ( 30 g ) Whipped Cream
Instructions
Peel eggplant and chop into small dices.
Add butter, eggplant, stevia and 1/2 cup of water in a 10-inch saucepan,. Cover and cook until the eggplant is cooked through, about 5 minutes.
Add in apple pie spice and xanthan gum and stir. Add 1/4 cup additional water if needed. Allow everything to cook and thicken for an additional 1-2 minutes.
Serve with whipped cream and do not treat the whipped cream as optional in this recipe.
