For some, the holiday season can be summed up with one word: Eggnog . Some people aren’t a fan, others absolutely love it, but pretty much everyone can agree that it’s one of the most popular holiday beverages out there.

And for those of us who love it, we buy up pretty much every eggnog flavored treat and dessert while they’re available. If you’re one of those people, you’re sure to love my Keto Eggnog!

Keto and eggnog are probably two words you never expected to see together, but I assure you that this Keto Eggnog Custard will not disappoint. This custard gives you the full eggnog experience without the traditional carby-ness of eggnog.

It’s all the seasonal deliciousness you’ve come to love without any of the guilt. It’s also low in sugar, gluten-free and vegetarian.

I mean, come on! Does it get better than that?

Actually, yes.

Because that’s not even the best part of this Keto Eggnog Custard recipe. This recipe takes only 5 simple ingredients to make and it’s made quickly and easily right in your microwave –yes, a microwave.

If you do any level of cooking on a regular basis you are likely to already have all of the ingredients already on hand. This recipe is a simple as throwing all of the ingredients into a blender and then cooking them in the microwave for a few minutes.

With all the crazy hustle and bustle of the holiday season, why should your desserts add any stress to your life?

What Is Eggnog?

Eggnog is traditionally a drink that is enjoyed during the holiday season that is very rich. It is dairy-based and generally made with cream, sugar, and eggs.

Since this is a Keto eggnog , we’re going to switch it up a little bit to keep it low carb.

Is It A Keto Eggnog? Or Is It A Keto Custard?

Both. Either.

In my typical #ruthlessefficiency fashion, I’m giving you one recipe that can either be eggnog or a creme anglaise type of pourable custard.

If you cook it according to the directions I provide, you will have eggnog. If you use a thermometer and continue to cook to 185F you will have a custard–an eggnog flavored custard, that incidentally, is to die for.

Ingredients You’ll Need

Believe it or not, you only need FIVE ingredients to make a tasty holiday dessert or drink! Most of them will be kitchen staples if you’re used to eating low carb. Even if you’re not, Truvia is the only “special” ingredient you’ll need to grab for this.

Even if you’re not eating low carb, you’ll still love the flavors of this dish. Don’t want to grab a sugar substitute? You can use regular sugar (in a smaller amount).

  • Eggs
  • Half and Half
  • Heavy Whipping Cream
  • Truvia
  • Ground Nutmeg

How To Make Keto Eggnog Custard

  1. In a blender on low speed, blend together eggs, half and half, whipping cream, Truvia and ground nutmeg, taking care to not whip air into the mixture.
  2. Pour mixture into a 6-cup microwave-safe bowl , preferably a see-through glass bowl to keep an eye on it.
  3. Cook in your microwave at 50% power. This 50% thing is REALLY IMPORTANT. Do not use at full power unless you want scrambled eggs in your custard (ask me how I know). Stir thoroughly.
  4. Continue to cook at 50% power for an additional 3-4 minutes. Stir well.
  5. Serve either hot or cold.

How To Make It On The Stovetop

I know not everyone has a microwave or likes to use one. So, if you’re one of those people, there’s no need to skip this recipe.

If you have a candy thermometer or any other probe thermometer, you can easily make this on the stovetop.

  1. Add the ingredients to a saucepan as you would if you were to make it in the microwave.
  2. Turn on the burner to low heat and warm until it reaches a temperature of 185F
  3. Remove from heat, garnish with additional nutmeg and enjoy!

Tips And Tricks

  • If you’d like to have a crème anglaise or pourable custard consistency, use a thermometer and cook the mixture until it reaches about 185F. Be sure to stir every 30 seconds after the initial 7-8 minute cook cycle.
  • If you find a little egg curdling has occurred, don’t worry. Just use a whisk and blend gently while the mix is still hot and you should have a smooth eggnog.

Yes, keto stuffed mushrooms do still have carbs. Luckily, I modified this recipe to have as few carbs as possible while still giving all of your favorite flavors.

Can You Have Mushrooms On Keto?

Not only can you have mushrooms while living a low carb lifestyle, but they’re also one of the most popular foods to eat while eating keto.

Portabella mushrooms only contain a little over 2 net carbs per serving while being extremely low in calories. Each Portabello mushroom only contains around 15 calories, depending on size.

How Do You Get Moisture Out Of Mushrooms Before Stuffing?

When cooking stuffed mushrooms, many people choose to partially dehydrate them before stuffing them. I’ve personally found that the texture difference in pre-roasting them before stuffing them isn’t significant enough to warrant the extra step or time.

The moisture from the cream cheese and the spinach softens the mushroom caps a bit, so pre-roasting doesn’t make a substantial difference in the bite.

Ingredients Needed

  • Portobello Mushrooms - I prefer portobello when I’m stuffing mushrooms because they’re larger and I feel like I get more “bang for my buck” with prep work.
  • Baby Spinach - Is tender and cooks up quickly when stuffed inside of the mushrooms.
  • Cream Cheese - Melts up deliciously creamy and pairs well with the meaty flavors of the portabello mushrooms.
  • Mozzarella Cheese - Creates a bit of a “crust” on top of the mushroom caps when they are air fried to give the illusion of a breadcrumb topping while still keeping each bite low carb.
  • Olive Oil Spray - This helps crisp the outside of the mushrooms to give a depth of texture in each bite.
  • Garlic
  • Salt
  • Pepper

How To Make Air Fryer Stuffed Mushrooms

  1. Clean the mushrooms and carefully remove the stems from the mushroom caps.
  2. In a large bowl, mix together cream cheese, half of the mozzarella cheese, minced garlic, salt, pepper, and chopped spinach.
  3. Spoon the filling into the mushroom caps and spray the mushrooms lightly with olive oil.
  4. Place the mushrooms into the air fryer basket and air fry for 10 minutes.
  5. Two minutes before the cooking time is complete, add reserved mozzarella cheese and complete the cooking cycle.
  6. Carefully remove the stuffed mushrooms from the air fryer basket and serve.

Variations

  • Make them meaty. If you want to increase the amount of protein per serving, you can add pre-cooked sausage to the cream cheese, mozzarella, and spinach mixture before air frying.
  • Spice them up. Mix in a few tablespoons of diced green chilis for a slight kick of heat.
  • Add some crunch. If you’re not worried about carbs, you can top the stuffed mushrooms with a breadcrumb and parmesan cheese mixture. Add this to the top in the last few minutes of cooking to toast the topping to perfection.

How Long Do You Cook Frozen Stuffed Mushrooms In The Air Fryer?

If you are pressed for time or happen to just love the frozen stuffed mushrooms you can pick up at the local grocer, you can also cook these in your air fryer.

One of the biggest advantages of making anything in the air fryer is how quickly it cooks. To prepare frozen stuffed mushrooms in the air fryer, heat your air fryer to 375F and cook for 10 minutes.

What Do You Serve With Them?

Choosing what to serve with air fryer stuffed mushrooms completely depends on how you’re choosing to enjoy them. If they’re being eaten as an appetizer , you’ll likely pair them with another appetizer for a party or tailgating. If you’re having them for a low carb vegetarian dinner, you’ll likely be looking for a fresh-flavored side dish.

Here are a few of my favorite things to enjoy with air fryer stuffed mushrooms no matter the occasion:

How Long Do They Last?

Mushrooms are essentially a sponge, so they have a tendency to become very soft if exposed to any outside moisture. With the moisture the filling ingredients can excrete during the cooking process, these air fryer stuffed mushrooms can become soggy if stored for too long.

For the best bite, I would suggest enjoying these straight out of the air fryer. If you do happen to have a few leftovers to enjoy later, I would recommend eating them within a day or two.
