It is literally as easy as dumping all the ingredients together and mixing them in a stand mixer until the mixture is smooth and creamy.
Then you just refrigerate the mixture for 1-2 hours and you have yourself a delectable keto dessert. But don’t let the simplicity of the dish fool you, this is incredibly tasty!

Is Carbquik OK For Keto?
Yes, Carbquik is a great solution to replace flour if you’re eating a low carb diet. It has 16 carbs per serving, but it also has 14 grams of dietary fiber, so you’re only consuming 2 net carbs per serving when you make Carbquik recipes using it.
Can You Replace Flour With Carbquik?
Yes, you can replace flour with Carbquik. However, you can’t just use it as flour in any recipe and expect the same results.
Carbquik isn’t just a low carb flour replacement. It also has other ingredients they are:
- Carbalose™ flour
- Palm and palm kernel oil
- Buttermilk powder
- Baking powder
- Egg white powder
- Lecithin
- Salt
How Are These Low Carb Scuffins?
You will need to get CarbQuick flour to make these with. It’s an easy way to make these low carb without buying separate flours.
I don’t know, nutritionally, how to account for the fact that the initial wash, soak, and drain steps get rid of all the added sugar from the fruit. The recipe may have fewer carbs than I state on the nutrition label below.
What Fruits Are Good To Use In Carbquik Recipes?
When choosing the fruits to make Carbquik recipes with, you will need to keep some things in mind.
- Different fruits have different carb counts. If you’re unsure as to which fruits are low-carb or Keto friendly, you can check out my post on the best Low Carb Fruits and Vegetables .
- Dried fruits can be loaded with added sugars. Try and find dried fruits that have no added sugar to make these low-carb.
Ingredients You’ll Need
- 3/4 cup Dried Fruit, soaked for an hour OR 1 cup Fresh Mixed Berries - Adds natural sweetness, bursts of flavor, and chewy or juicy texture to the scuffins. Soaking dried fruit softens it for better incorporation, while fresh berries keep the scuffins light and moist.
- 2 cups Carbquick Baking Mix - Serves as the low-carb flour substitute, giving structure and body to the scuffins while keeping carbs minimal. It helps create a tender crumb similar to traditional baked goods.
- 1/4 cup Butter - Provides richness, flavor, and moisture. Butter helps create the slightly crumbly texture reminiscent of a scone while enhancing the overall taste.
- 1/2 cup Heavy Whipping Cream - Adds fat and creaminess, keeping the scuffins soft and moist. It also contributes to the tender texture and helps the dough come together easily.
- 1 Egg - Acts as a binder, helping the ingredients hold together. The egg also adds lift and contributes to the light, muffin-like texture.
- 1/3 cup Truvia - Provides sweetness without the added sugar, keeping the recipe low-carb and keto-friendly while enhancing the flavor of the fruit and almond extract.
- 1 teaspoon Almond Extract - Adds a warm, nutty aroma and depth of flavor that complements both the butter and the fruit, giving the scuffins a bakery-style finish.
How Do You Make Scuffins?
- Soak one cup of dried mixed fruit (very little to no sugar added) in 2 cups of hot water for 30 minutes. Drain the water and add fresh hot water and cover for another 30 minutes. You are doing this to get rid of any sugar added to the fruit, and also to rehydrate the dried fruit.
- Using a strainer , allow the fruit to drain for 15 minutes.
- If using fresh fruit, skip this step.
- Preheat oven to 375F
- While the fruit drains and the oven preheats use a pastry cutter to cut butter into the Carbquik .
- In a separate bowl, mix egg, 1/2 cup heavy cream, almond essence, and sugar substitute .
- Add to dry mixture, and mix until well blended.
- Fold in rehydrated mixed fruit or fresh berries. Form into 12 balls and place on a greased cookie sheet . Push down to flatten slightly and neaten edges.
- Bake at 375 for 15-20 minutes until the tops are browned and a toothpick inserted inside is clean.
