Like most anything on keto, as long as you’re not exceeding your daily carb goal, you should be able to get into ketosis with no problem.

  3. Add spices. Mix the various spices in a small bowl and once the ground beef is somewhat brown (but not fully cooked), add the powdered spices and allow the spices to bloom for 30 seconds.
  4. Thicken. Add in the blended corn tortillas (or use Xantham gum to thicken if you’re making this Keto) and tomatoes and use the 1/2 cup water to wash out the blender and pour that into the pot.
  5. Cook. Seal quickly, cook at high pressure for 10 minutes, and allow it to release pressure naturally for 10 mins and then release remaining pressure.
  6. Serve. Mix well, top with cheese if desired and serve.

Yes, you can absolutely freeze keto chili, and it freezes beautifully! Once the chili has cooled completely, transfer it into airtight containers or freezer-safe bags, leaving a little space at the top for expansion.

Label the containers with the date, and store them in the freezer for up to 3 months.

When you’re ready to enjoy it again, simply thaw it overnight in the refrigerator and reheat it gently on the stovetop or in the microwave until hot.

Keto Chili Recipe | Instant Pot Chili Without Beans

Equipment

  • Instant Pot
  • Instant Pot Ace Blender
  • Measuring Cups

Ingredients

  • ▢ 1 tablespoon ( 1 tablespoon ) Oil
  • ▢ 1 cup ( 160 g ) Onion , chopped
  • ▢ 1 tablespoon ( 1 tablespoon ) Garlic , minced
  • ▢ 1 pound ( 453.59 g ) Lean Ground Beef
  • ▢ 1 cup ( 260 g ) Canned Fire Roasted Tomatoes , canned
  • ▢ 1 tablespoon ( 1 tablespoon ) Chipotle Chile in Adobo Sauce , chopped
  • ▢ 2 ( 2 ) corn tortillas
  • ▢ 1/2 cup ( 125 g ) Water

Spice Mix

  • ▢ 3 teaspoons ( 1 tablespoon ) Mexican Red Chili Powder , (not cayenne, Mexican chile powder)
  • ▢ 2 teaspoons ( 2 teaspoons ) Ground Cumin
  • ▢ 2 teaspoons ( 2 teaspoons ) Kosher Salt
  • ▢ 1 teaspoon ( 1 teaspoon ) Dried Oregano

Instructions

  • Heat the Instant Pot on the saute function. When it’s hot, add the oil and then add chopped onions and minced garlic. Stir for 30-seconds and then add ground beef. Break up the ground beef and allow it to brown slightly.
  • Meanwhile blend together the canned tomatoes, chipotle chili, and the corn tortillas until relatively smooth.
  • Mix the various spices in a small bowl and once the ground beef is somewhat brown (but not fully cooked), add the powdered spices and allow the spices to bloom for 30 seconds.
  • Add in the blended corn tortillas and tomatoes and use the 1/2 cup water to wash out the blender and pour that into the pot. (Use 1/4 teaspoon of Xantham Gum in place of corn tortillas while it is boiling to make low carb)
  • Seal quickly, cook at high pressure for 10 minutes, and allow it to release pressure naturally for 10 mins and then release remaining pressure.
  • Mix well, top with cheese if desired and serve.

Instant Pot Chili Tips And Tricks

  • To increase the fat macros, top with cheese, sour cream, avocados, or all of the above!
  • If you do want to use a packaged mix, I have an old recipe here for it, and it works well.
  • If you don’t follow the Keto lifestyle, you can add corn and a can of beans after cooking to make it more hearty.
  • Some people like to add a little fish sauce to their chili recipes. You can add 2 teaspoons of fish sauce to the mix if you’d like, but this Low Carb Chili is so good that you most likely won’t need to.
  • You can use a can of crushed tomatoes in place of the canned fire-roasted tomatoes if you are having a hard time finding some, but I highly recommend using the fire-roasted as it adds a lot more flavor to the dish.

  • Customizable. There are so many different ways for you to prepare/customize this delicious keto soup recipe. Want more veggies ? Add some celery and bell peppers. Don’t care if the soup is low carb ? Add in some beans, corn and/or rice. It’s totally up to you!

Ingredients You’ll Need

For The Soup

  • Ground Beef
  • Onion
  • Minced Garlic
  • Taco Seasoning
  • Kosher Salt
  • diced tomatoes

For Finishing

  • Heavy Whipping Cream
  • Shredded sharp cheddar cheese
  • Avocado
  • Green Onions
  • Cilantro

How To Make Keto Taco Soup

  • Sauté. Turn the Instant Pot to Sauté. When the indicator reads hot, add the ground beef, onions, and garlic. Break up the meat as much as possible. When the meat is no longer in a big clump, add the taco seasoning and salt, and cook for about 1 minute.

  • Deglaze. Add ¼ cup of water and thoroughly deglaze the Instant pot liner.

  • Add undrained tomatoes and remaining cup of water.

  • Cook. Secure the lid on the pot. Set the Instant Pot at High pressure for 5 minutes. When cook time is complete, let pot release pressure naturally for 10 minutes, and then release all remaining pressure.

  • Stir. Open the pot and stir in the whipping cream and cheese. Add more water if needed.

  • Serve. Divide into four bowls, and top with sliced avocado and green onions, if using, right before serving.

How To Make Crockpot Taco Soup

  1. Brown the meat and add to the slow cooker
  2. Add all remaining ingredients except for the cheese and heavy whipping cream and stir.
  3. Cook on high for 3 hours
  4. Mix in whipping cream and shredded cheese.
  5. Top with sliced avocado and green onions and serve.

Is Taco Soup Healthy?

One of my favorite things about this creamy soup recipe is that it’s keto-friendly . Each serving has only 8 grams of carbs! It’s also very customizable, and many of the ingredients are optional, so feel free to tweak the recipe to ensure that it meets your dietary needs.

How Many Carbs Does Taco Soup Have In It?

This Keto Taco Soup is a great option for a low carb lifestyle and can easily be fit into your daily macros. It has a total of 8 carbs per serving with a net carb count of 6 per serving.

How Long Is Taco Soup Good For?

When stored properly in an airtight food container, this low carb soup recipe should last about 3-5 days in the fridge. If you plan on freezing the soup , leave the heavy cream and cheese out and add it in when you reheat the soup.

Taco Soup Variations / Options

Variations

  • Use ground chicken or ground turkey.
  • Use chicken thighs rather than ground beef . Cook for 10 minutes under pressure. Remove chicken and shred, and then proceed as written from step 5.
  • Substitute Rotel for diced tomatoes.
  • Use 4 oz of diced cream cheese rather than whipping cream.
  • Add chopped peppers, celery, and/or carrots along with the onions and meat.
  • Use pepper jack cheese, or really any other easily melted cheese rather than cheddar.

NOTE: If you aren’t watching carbs, you can make the following changes:

  • Add the canned beans and corn to the pot along with the tomatoes and proceed as directed.
  • Replace whipping cream with fat-free evaporated milk.
  • Add ¼ cup arborio rice along with the tomatoes. Add 1.5 cups of water with the tomatoes and cook for 6 minutes High Pressure, 10 mins NPR .
  • There’s no reason you can’t add rice , beans, corn, AND additional vegetables to stretch that meat a little more.

Instant Pot Keto Creamy Taco Soup

  • ▢ 14 ounces diced tomatoes , 1 can

For Finishing

  • ▢ 4 ounces Heavy Whipping Cream
  • ▢ 1 cup shredded sharp cheddar cheese
  • ▢ 1 Avocado , sliced (optional)
  • ▢ 1/2 cup Green Onions , chopped (optional)
  • ▢ 1/2 cup Cilantro , chopped

Optional Non-Keto Ingredients

  • ▢ Kidney Beans , cooked
  • ▢ Corn , cooked
  • ▢ Black Beans , cooked

Instructions
