Does Eggplant Taste Like Apples?

Well, that all depends on how you cook it. If you simmer it down, add sweetener, add apple pie spice, and then thicken it, it totally tastes like apples.

Seriously. This tastes like apple pie filling. I asked people in my Keto Twosleevers group (a group you should join by the way) to taste test it. I asked them to feed it to unsuspecting members of their family.

How To Make Crustless Apple Pie

This isn’t one of those low-carb desserts that take 100 different steps and hours of chilling before you can enjoy it. It is so quick and easy to make you’ll be reaching for it again and again.

  1. Peel the eggplant. Once it is completely peeled, chop it into equal sized pieces.
  2. Add butter, eggplant, stevia and water in a saucepan. Cover and cook until the eggplant is cooked through.
  3. Mix in apple pie spice and xanthan gum and stir. Allow everything to cook and thicken.
  4. Serve with whipped cream. Don’t skip this step. You’ll thank me later.

Tips And Tricks For Making Low Carb Apple Pie

  • Cut the eggplant into small dices. The smaller the pieces, the easier is it to believe they are apples.
  • You may need to add water depending on how dry/moist your eggplant is
  • Cover and let the eggplant cook until it’s mushy and done
  • If your eggplant is old and has seeds, you can remove them. I used younger eggplants and did not de-seed.
  • Be absolutely sure to peel the eggplant.
  • Add apple pie spice if you taste any eggplant flavor at all.
  • DO NOT SKIP THE WHIPPED CREAM. I don’t know why, but the cream makes a huge difference to this recipe.

What To Serve It With

Do you really need the whipped cream? Well I mean. I ALWAYS need whipped cream!

But yes, for this recipe, I think you definitely need the whipped cream. It hides any remaining eggplant taste and it’s just a perfect complement.

Depending on how many carbs you allow yourself, you can also serve it with this PLAIN GREEK YOGURT.

How Long Does It Last?

  • ▢ 4 cups ( 328 g ) Chopped, Peeled Eggplant
  • ▢ 1/4 cup ( 0.25 g ) Truvia
  • ▢ 3 tablespoons ( 3 tablespoons ) Butter
  • ▢ 1/2 teaspoon ( 0.5 teaspoon ) Xanthan Gum
  • ▢ 2-3 teaspoons ( 2 teaspoons ) Apple Pie Spice
  • ▢ 1/2-3/4 cup ( 125 g ) Water
  • ▢ 1/2 cup ( 30 g ) Whipped Cream

Instructions

Before I get a lot of people complaining at me for using ginger when I should use galangal—I know. I know that traditional Thai Tom Kha Gai uses galangal and not ginger.

I know that galangal and ginger don’t taste the same, that galangal is piney, and light and that ginger has a stronger flavor.

I also know that about 85% of my readers do not have easy access to galangal, me included.

So I wrote the recipe to make it accessible to all. If you have galangal, by all means use it. If you don’t like ginger, by all means omit it.

But whatever you do please don’t write and comment and complain because I’ve explained WHY I made the choice I did.

You know why else I chose it? Because I tried it with Ginger and actually LIKED it that way. So there.

  • ▢ 3 cups Chicken Broth , or water
  • ▢ 1 pound Boneless Skinless Chicken Thighs , cut into bite size pieces
  • ▢ 6-8 slices Fresh Ginger Root , thin slices
  • ▢ 2 Red Thai Chilies , left whole
  • ▢ 1 cup Straw Mushrooms , canned, undrained
  • ▢ 2 tablespoons Fish Sauce
  • ▢ 1 tablespoon Minced Lemongrass
  • ▢ 1/2 teaspoon Splenda
  • ▢ 1 can Full-Fat Coconut Milk , 13.5 oz can
  • ▢ 1/2 teaspoon Kosher Salt

For Serving

  • ▢ 1/4 cup lime juice , fresh
  • ▢ Lime Zest , zest of 1 lime
  • ▢ fresh cilantro leaves and stems
  • ▢ Lime Wedges

Instructions
