If you’re familiar with cooking sweet potatoes, you know that they can come in a large variety of shapes and sizes.
The key to successfully cooking Instant Pot Sweet Potatoes is choosing sweet potatoes that are consistent in size. Sweet potatoes with a smaller circumference will cook faster than sweet potatoes with a larger circumference.
For this recipe, I’m using smaller sweet potatoes that are approximately 2 inches in diameter. These tend to make a nice side dish portion and cook quickly.
How Long Does It Take Potatoes To Soften In The Instant Pot?
To get pillowy soft sweet potatoes in your Instant Pot, you will need to cook them for approximately 15 minutes in the Instant Pot under high pressure. Allow for a natural pressure release after the cooking time has ended.
Do Sweet Potatoes Cook As Fast As Regular Potatoes?
As long as the size of the potatoes is roughly consistent, sweet potatoes and regular potatoes (such as Russet potatoes) will cook in the same amount of time.

- Sweet Potatoes - These should be about 2" in diameter
- Salt and Pepper - Just enough to bring out the naturally delicious flavors of the sweet potato.
- Rosemary - Adds a woodsy, herbaceous note to the dish.
- Butter - Everything is better with a little butter.
- Water - To create pressure inside of your Instant Pot.

- Thoroughly wash your sweet potatoes.
- Place a trivet in the Instant Pot liner.
- Lay the sweet potatoes on top of the trivet.
- Add water to the Instant Pot liner.
- Place the lid on the Instant Pot and cook under high pressure.
- Once the cook time has been completed, allow the pressure to release naturally.
- Remove the Instant Pot lid and remove the sweet potatoes.
- Slice lengthwise down the sweet potato and add your favorite toppings.
Tips And Tricks
- Size matters. Make sure your sweet potatoes are all around the same size so they cook consistently. The last thing you want is one overcooked potato and one that is still hard as a rock in the center.
- Use a trivet. Placing your sweet potatoes on a trivet will help prevent them from getting a “hot spot” on the bottom where the potato directly touches the hot liner.
- Season well. While sweet potatoes are incredibly delicious on their own, they can always use the help from your spice rack to make them even better.
- Stuff them. Who likes a boring meal? Not me. Make these sweet potatoes even more exciting by filling them with some of your favorite veggies or proteins.

Farro is a whole-grain type of ancient wheat that’s high in both protein and fiber. It has a lot of similarities to barley, including both its appearance and its texture. It has a very chewy consistency when it is cooked, which adds a fantastic texture to this Farro Risotto recipe .
Farro has a very nutty flavor profile, similar to that of brown rice. It is often used as an alternative to rice and pasta and it is rich in nutrients such as vitamins A, B, C, E, and magnesium.
Is Farro Better For You Than Rice?

How To Cook Farro | Instant Pot Instructions For Cooking Farro Risotto
- Soak the farro in 2 cups of hot water while you get the other ingredients together.
- Press Sauté on the Instant Pot and when it is hot, add butter and garlic and let it sizzle for 5-10 seconds. Add onions and stir. Press CANCEL to turn off the Instant Pot .
- Add butternut squash, farro , water, salt, pepper, thyme, and water.
- Close the lid and press PRESSURE COOK. Cook on HIGH pressure for 10 minutes. Then, allow the pot to rest undisturbed for 10 minutes and then release all remaining pressure.
- Open the pot. If you like, you can remove some of the butternut squash pieces now for decoration since you’re about to pulverize them.
- Add parmesan and butter. Stir all of it to smush some of the farro and butternut. Garnish with chopped green onions if using, and serve hot.
Tips And Tricks For Making Farro Risotto With Butternut Squash
- To make this recipe vegan , simply vegetable oil instead of butter and omit the parmesan cheese.
- Remove some of the butternut squash before mixing the risotto if you’d like to leave some of it intact as mixing the finished risotto will mush all of the squash.

Equipment
- Instant Pot
Ingredients
- ▢ 1 tablespoon Butter , or oil
- ▢ 1 tablespoon Minced Garlic
- ▢ 1 cup Chopped Green Scallions , diced, both green and white parts
- ▢ 1 cup Pearled Farro , soaked in hot water for 15-20 minutes
- ▢ 1.5 cups Water
- ▢ 1 teaspoon Kosher Salt
- ▢ 1 teaspoon Ground Black Pepper
- ▢ 1/2 teaspoon Dried Thyme
- ▢ 2 cups butternut squash , diced, cut into 1/2 inch pieces
For Finishing
- ▢ 2 tablespoons Butter
- ▢ 1/2-3/4 cup shredded parmesan cheese
- ▢ 1/4 cup Chopped Green Scallions , chopped
