  • Potatoes - I use Russet potatoes for this dish, but you can also use cubed Yukon Gold or Red Potatoes for an equally delicious bite.

  • Bacon - This really gives a ton of flavor to the dish. For a vegetarian version, omit.
  • Cheese - Adds a salty, flavorful element to the soup.
  • Heavy Cream - Makes the base of the soup perfectly creamy and thick.
  • Onion - The sweetness of the cooked onion balances the saltiness of the bacon and cheese.

How To Make Instant Pot Potato Soup

  1. Peel the potatoes and cut them into 1/2" cubes.
  2. Finely dice the onions and cut the bacon into small chunks.
  3. Turn the Instant Pot to saute. Once the inner liner is hot, dump the bacon and onions inside. Cook until the bacon is slightly crisp and the onions are translucent.
  4. Use the chicken broth to deglaze the bottom of the pan. Place the cubed potatoes and spices into the Instant Pot liner.
  5. Place the lid on the Instant Pot and cook under high pressure for 4 minutes. Once the cooking time is complete, allow the pressure to naturally release for 10 minutes and then manually release all remaining pressure.
  6. Remove the Instant Pot lid and stir in heavy cream and cheese until the cheese is melted.
  7. Ladle a bowl full and garnish with additional cheese, bacon, and green onions and serve hot.

Variations

  • Make it meaty. If you want to add a little more protein to your Instant Pot Potato Soup, add some precooked cubed ham to the Instant Pot before you bring it to pressure. This will add a delicious smoky and salty element to your bow.
  • Thicken it up. I go into detail below on different ways to thicken this soup recipe, but for a more hearty bite, consider using one of them.
  • Add some veggies. Soups are a great way to sneak more veggies into your diet. If you want to add more nutrition to each bite, feel free to add broccoli, cauliflower, peas, or even carrots.
  • Get creative with the garnish. This is where the magic happens. You can be as creative as you want when topping your bowl of potato soup. I prefer bacon, cheese, and a sprinkle of green onion over mine.

How Do You Make Potato Soup Thicker?

If you’re a fan of thicker soups, there are two different ways to make this Instant Pot Potato soup even thicker.

The first way doesn’t require any additional ingredients, so it doesn’t impact the macros listed below in the recipe card. After the potatoes and broth are cooked under pressure, use the back of a spoon to smash some of the potato chunks before adding in the rest of the ingredients.

The second way is to add some cream cheese. Just adding a couple of ounces of cream cheese to your potato and broth and allowing it to melt will make your soup significantly thicker. Be sure to adjust the macros per serving to include the cream cheese if you make this modification.

How Long Does The Instant Pot Take To Get To Pressure For Soup?

The amount of time it takes for a soup recipe to come to pressure in the Instant Pot isn’t a cookie-cutter number. There are many variables that can impact how long it takes for your Instant Pot to come to pressure.

The amount of liquid you have inside your pot and the temperature of the ingredients added to the pot can significantly impact the time to come to pressure. The more liquid you have or the cooler your ingredients are, the longer it will take.

The average amount of time it takes an Instant Pot to come to pressure for soup is 10 minutes, but it can range from 5 to 15 minutes.
