What Are The Best Potatoes For Potato Salad?

This is a very heated question among a lot of home cooks I’ve asked. Many swear by using waxy potatoes (such as red potatoes), but many people swear by using a more starchy potato (think Russet or Idaho potatoes).

The reason many people choose to use waxy potatoes over starchy potatoes is that they are afraid of the potatoes releasing too much starch and creating a gluey consistency.

If you follow my cooking instructions, you can use any potato you happen to have in your pantry. The ingredients I listed below lists fingerling, but feel free to get creative with your choice of potato.

How To Make Instant Pot Potato Salad

Prepare The Potato Salad

  1. Peel the potatoes and cut them into 1-inch chunks
  2. Place potatoes in the bottom of the Instant Pot liner
  3. Place eggs on top of the chunked potatoes
  4. Add water
  5. Cook under high pressure for 5 minutes
  6. Allow pressure to release naturally for 5 minutes and manually release any remaining pressure.
  7. Remove the eggs from the Instant Pot liner
  8. Carefully remove the shell from the hard-boiled eggs
  9. Slice the eggs in half lengthwise and remove the yolks from the egg whites. Place these aside for the dressing.
  10. Pour vinegar over the cooked potatoes before adding the dressing.

Make The Dressing

  1. Mix together the mayonnaise, mustard, egg yolks, and spices to create the dressing.
  2. In a large bowl, gently fold the dressing into the potatoes. Try to avoid crushing or breaking the potatoes as much as possible.
  3. Place the potato and dressing mixture in the refrigerator for 30-45 minutes for the flavors to meld.

Finish And Serve

  1. Dice the onion, celery, and egg whites into small pieces.
  2. Add the diced onion, egg whites, and celery into the chilled and dressed potato mixture.
  3. Serve and enjoy!

Tips And Tricks

  • Cut your potatoes into uniform pieces to ensure they cook evenly.
  • Stir the dressing into your potato salad GENTLY to avoid creating a mashed potato salad. The potatoes become very tender in the Instant Pot.
  • Peel your hard-boiled eggs under running water to remove the shell easily.
  • Pour the vinegar over the cooked potatoes immediately after cooking and draining them. This will help them absorb the acidity of the vinegar.

Can You Freeze Potato Salad?

Technically, you CAN freeze potato salad and it will be safe to eat when it is defrosted at a later date. Typically freezing anything with dairy in it will not have the same texture after it is frozen and reheated. I have found that freezing potato salad and defrosting it leads to a more watery consistency.

How Long Does Potato Salad Last?

This Instant Pot Potato Salad is best enjoyed 3-4 days after it is prepared when stored in an air-tight container in the refrigerator.

What Are Pinwheel Sandwiches Made Of?

As I mentioned earlier, pinwheel sandwiches can be very versatile, so feel free to swap out the filling to replicate your favorite sandwich.

Here’s what I used to make my pinwheel sandwiches:

  • Ham - You can use honey roasted, black forest, or any other variety of ham lunch meat you have on hand.
  • Swiss Cheese - Thinly sliced varieties make the pinwheels easier to roll.
  • Lettuce - I used green leaf lettuce, but a red leaf, romaine, or iceberg also work well in this recipe.
  • Mayonnaise - This adds some additional moisture to the pinwheel sandwiches to keep the wraps from drying out.
  • Tortillas - I used low carb tortillas for my pinwheels, but any type or size of flour tortilla will work.

How Do You Make A Pinwheel Sandwich?

  1. Wash and prepare your lettuce.
  2. Spread a layer of mayonnaise to completely cover the top of your tortilla.
  3. Completely cover the mayonnaise-covered tortilla with a layer of lettuce.
  4. Cover the layer of lettuce with a layer of cheese.
  5. Place a layer (or two if you’re wanting a more filling pinwheel) with ham.
  6. Starting from one end of the tortilla, tightly roll the filled tortilla shell to create a spiraled wrap.
  7. Cut the wrap into 3" long pieces and serve.

Tips And Tricks

  • Switch up the filling. Use your favorite combination of sliced meats and cheeses for your perfect pinwheel sandwich.
  • Try them warm. Skip the lettuce and then pop them in the air fryer for a crispy crust. Spray the outside of the tortilla lightly with oil or cooking spray and air fry at 375F for 4-5 minutes.
  • Get to dipping. Dip these ham and cheese pinwheels in your favorite dipping sauce. Try ranch, BBQ, or marinara sauce!

How Do You Get Pinwheels To Stick?

Pinwheels have a tendency to fall apart easily if they are not rolled properly or if they are prepared ahead of time and have a chance to unravel before they are enjoyed.

To ensure your pinwheels will stick you can use either one of my two tried and true methods:

  1. Use toothpicks . If you’re making these for an appetizer, stick a toothpick through each pinwheel sandwich to ensure they don’t unravel and it will also provide a sanitary way to grab each portion.
  2. Wrap and chill . If you’re making these to pack in a lunch box or in a picnic basket, you can make them ahead of time and wrap them tightly in plastic wrap. After wrapping them, allow them to chill for 20 minutes to an hour. This will help the mayo-covered tortilla hold its shape when cut.

How Long Do They Last?

Ham and Cheese Pinwheels are great for lunchbox meal prep. You can make them ahead of time and chill them in plastic wrap or an air tight container in the refrigerator for 3-4 days.

If they are kept much longer than that, the texture of the tortilla can become soggy because of the moisture the mayonnaise and lunch meat release.

What To Serve With Them

While the standard side dish for a sandwich is potato chips, they usually aren’t low carb. So, if you’re watching your carbs, here are a few options to enjoy with your pinwheel sandwiches:

  • Air Fryer Jalapeno Poppers - A delicious appetizer with a kick of heat.
  • Keto Broccoli Salad - A low carb take on your favorite BBQ side dish.
