Why You’ll Love This Curry Beef Recipe

  • Fast. A cook time of less than 30 minutes .
  • Easy. Make this Beef Curry with the help of your Instant Pot .
  • Low Carb . Only 4 carbs per serving.
  • Authentic. Packed with authentic Indian flavors .

What Makes This A Beef Curry?

I didn’t grow up with something called curry powder so when people say they don’t like “Curry” it’s very confusing to me. This is a proper curry–but it doesn’t use store-bought curry powder.

If you read much on my site, you’ll find out that this is something I will talk about often. Curry paste is much more popular and tastes so much better. EITHER WAY, this recipe uses neither curry paste or curry powder. But it’s still very Indian, and still very much a curry.

How Do You Make Indian Beef Curry Flavorful?

Cooking this Beef Curry recipe in the Instant Pot helps infuse all of the delicious spice flavors into the beef in a fraction of the time of cooking it in the slow cooker or on the stovetop.

Don’t forget to make your own Garam Masala spice mix to get the best flavor from this Indian Beef Curry .

What Kind Of Beef Is Used For Curry?

For this Beef Curry recipe , I used beef stew meat. Not only is it tender and flavorful, but it is also a very affordable cut of meat to make this a great choice for a family meal.

Ingredients You’ll Need

  • 1.5 pounds Beef Stew Meat - This is the hearty base of the curry. Beef stew meat becomes incredibly tender when pressure-cooked, soaking up the spices and aromatics.
  • 1 Onion - The onion forms the flavor foundation of the curry. Once sautéed, it adds sweetness, body, and richness to the sauce.
  • 2 Tomatoes - Tomatoes add acidity, moisture, and freshness to the curry. They help tenderize the beef while cooking and give the sauce its slight tang and vibrant color.
  • 4 cloves Garlic - Garlic provides bold, aromatic depth. It enhances the savory, umami qualities of the beef and pairs well with the warming spices.
  • 1/2 cup Cilantro - Stirring it in at the end or using it as a garnish adds freshness, brightness, and a pop of color that complements the richness of the curry.
  • 1 teaspoon Ground Cumin - Cumin brings warm, earthy notes that are classic in Indian-style curries.
  • 1/2 teaspoon Ground Coriander - Ground coriander adds citrusy, slightly sweet undertones to balance the stronger spices.
  • 1 teaspoon Garam Masala - This aromatic spice blend is used to layer flavor. It brings warmth, sweetness, and subtle spice, rounding out the curry.
  • 1/2 teaspoon Cayenne Pepper - Cayenne adds heat and a sharp spicy kick. The amount is enough to bring warmth without overpowering the dish.
  • Salt - Salt enhances all the flavors in the curry, bringing out the sweetness of the onions, the tanginess of the tomatoes, and the depth of the spices.

How To Make Beef Curry In The Instant Pot

  1. Place onion, tomatoes, garlic, and cilantro in a blender jar. Put the tomatoes at the bottom so that they will liquefy first and you won’t have to add water.
  2. Puree until all the vegetables have turned to a smooth mush.
  3. Add the various spice powders in and whirl it around a bit more.
  4. Place the beef into an Instant Pot and pour the veggies on top.
  5. Cook under pressure for 20-30 minutes depending on the type of beef you’ve used.

Tips And Tricks

Creating a deeply flavorful beef curry in the Instant Pot is easier than you think. These simple tips will help you build rich layers of flavor and ensure tender, perfectly cooked beef every time.

  • Use tomatoes for natural thickening. Fresh tomatoes break down beautifully under pressure and help create a thick, velvety sauce without adding flour or cream.
  • Control the heat level easily. Adjust the cayenne pepper to taste. Add more for a spicier curry or reduce it for milder palates.
  • Let the beef release naturally. Allowing a 10–15 minute natural pressure release helps the beef become extra tender and prevents it from tightening up.

Variations

Instant Pot Beef Curry is wonderfully versatile, and with just a few tweaks, you can customize the flavor, heat level, or ingredients to suit your preferences or whatever you have on hand.

  • Coconut Beef Curry - Add 1 cup of coconut milk after pressure cooking for a rich, creamy, tropical twist. This variation mellows the spices and adds a silky texture.
  • Potato & Pea Beef Curry - Stir in 2–3 diced potatoes before pressure cooking and add 1 cup of frozen peas after cooking. This creates a heartier curry with extra vegetables.
  • Tomato-Free Curry - If you prefer a less tangy curry, replace the tomatoes with 1 cup of beef broth or coconut milk for a smoother, richer sauce.
  • Extra Spicy Beef Curry - Increase the cayenne pepper, add chopped green chilies, or mix in 1 teaspoon of Kashmiri chili powder for more heat and deeper red color.

What To Eat With Beef Curry

Beef curry is rich, aromatic, and full of bold flavors, so pairing it with the right sides can help balance the meal and make it even more satisfying.

  • Basmati Rice - The fluffy texture and fragrant aroma make it the perfect neutral base to soak up all that flavorful curry sauce.
  • Naan or Roti - Soft, warm flatbreads are ideal for scooping up bites of curry and wiping the bowl clean.
  • Cauliflower Rice - A great low-carb alternative that still pairs wonderfully with the bold spices.
  • Raita - A cooling yogurt-based side that helps balance the heat and adds refreshing contrast.

How Long Does It Last?

This curry continues to get more flavorful the longer it sits. So, it’s even better as leftovers! Don’t be afraid to make a double batch while you have your Instant Pot running.

For the best results, enjoy your Instant Pot Beef Curry within 3-4 days of preparing it.

Can You Freeze It?

Yes, you can absolutely freeze beef curry, and it freezes exceptionally well thanks to its rich, saucy base and tender beef. The flavors even deepen over time, making it a great make-ahead meal.

Allow the curry to cool completely before transferring it to airtight containers or freezer-safe bags, leaving a little room for expansion. This beef curry freezes beautifully for up to 3 months.

When you’re ready to enjoy it again, thaw the curry in the refrigerator overnight and reheat it gently on the stovetop or using the microwave until fully warmed through.

Okay great idea, messy execution. The bones came right off the meat, but then I had to fish them out of the gravy with tongs, then I had to cut off the cartilage, oy veh! Get boneless meat, or prepare for a bit of a mess.
  • Okay that’s it! Serve over rice or cauli-rice if you’re watching carbs. Amazing, authentic tasting curry with no slaving over a hot stove to brown the onions and tomatoes and what not. Yummy!
