How to roast beets is a simple roasted vegetable side dish made with whole beets, a little oil, salt, pepper, and foil for roasting. It’s weeknight-friendly and works well for meal prep, gluten-free eating, and easy veggie sides. Unlike boiled or steamed beets, this version uses a foil-wrapped oven (or air fryer) method that caramelizes the beets for a sweeter, more concentrated flavor. Plus an optional quick broil for extra roasty edges.

Beets are nutrition and flavor bombs, especially when cooked correctly. One of the nicest things about beets, is that they are like me, #ruthlesslyefficient.

Every part of the beet is edible–from the beet root, to the beet stems and to the beet greens. All you need is to know how to cook the beets. I always look for beets with the greens since those leaves can be very tasty.

Ingredients You’ll Need

  • 4 Large Beets - Yep, that’s it. Just one simple ingredient is all you need to make the most delicious beets in both the Instant Pot and air fryer.

How To Make Roasted Beets in The Oven

Oven-roasted air fryer beets are delicious and relatively tidy. Roasting Beets make them taste more caramelized and sweet than boiled or steamed beets can, but it does take longer to cook them than making Instant Pot Beets.

  • Preheat the oven to 400F.
  • Scrub the beets and cut them in half for faster cooking. Toss beets with a little oil, salt, and pepper.
  • Place the beets on a large sheet of foil . Wrap the foil around the beets.
  • Bake the beets for 40-50 minutes until the baked beets are tender.
  • For a grilled taste to your beets, open up the foil, and broil the beets for about 5 minutes.
  • If you plan to do this, you may want to peel the beets before cooking, and perhaps also cut into wedges for maximizing the caramelly surface.

How To Cook Beets in TheAir Fryer

There are a couple of reasons why I love air frying the beets. The biggest reason is no water to get rid of, no pan to wash with beet liquid.

But the other reason is taste. Roasted beets have a sweeter taste, and air frying is like roasting to some extent.

I wrote a long article on how to determine which air fryer is best for you that you may be interested in.

Below, I’m showing you how to season and air fry beets all in one go.

  • Scrub the beets .
  • Peel and cut the beets into quarters . Place the beets in a large bowl.
  • Drizzle the beets with olive oil, salt, and pepper, or use chermoula or zhoug to coat and season the beets.
  • Set the Air fryer to 380°F for 25-30 minutes or until tender.

What To Do With Beet Greens

Really, every part of a beetroot is edible (apart from the little tail). The beet greens are a tasty and nutritious part of the plant.

Use them just as you would any other greens. Wash them well, and then turn them into a beets recipe that calls for spinach , swiss chard, or kale .

Can You Eat BeetsRaw?

Yes, you can. But the way to make them taste good is like in this beet salad recipes .

  • Wash and peel them well.
  • Grate them so you have smaller pieces of beets.
  • Tenderize them with a little acid such as lemon or lime juice.

They are very crunchy when eaten this way–crunchy in a good way–and are also less likely to have the more earthy taste that cooked beets can have.

Are Beets Keto?

Unfortunately, beets aren’t the most keto-friendly food choice. If you eat them in moderation, you can still manage to fit them into your macros.

However, they contain 10 carbs per cup. They’re also very high in natural sugars, so they may cause your body to fall out of ketosis if eaten in high amounts.

What To Eat With Roasted Beets

Roasted beets are naturally sweet, earthy, and tender, making them a versatile side dish that pairs beautifully with a variety of mains and complementary flavors. Whether served warm or chilled, they can elevate both simple and elegant meals. Here are some delicious ideas for what to eat with roasted beets:

  • Goat Cheese or Feta - The tangy creaminess of these cheeses balances the sweetness of the beets perfectly.
  • Arugula or Spinach Salad - Toss roasted beets into a leafy green salad with walnuts, citrus, or a balsamic vinaigrette for a fresh, vibrant pairing.
  • Grilled Chicken or Steak - The hearty, savory flavors of grilled meats contrast beautifully with the beets’ sweetness.
  • Salmon or White Fish - The mild, buttery flavor of fish complements the earthy beets, especially when paired with lemon or dill.

This Roasted Radishes recipe is the perfect keto side dish for your next meal. Radishes O’Brien made quickly and easily in your air fryer or oven and it’s full of flavor .

Radishes O'Brien Wide - 17

Why I Love Air Fryer Radishes O’Brien

Potatoes are easily one of the most missed foods when you’re living a keto or low carb lifestyle. Potatoes are so very delicious and versatile, and it’s an ingredient you often find yourself trying to find a good substitute for. One of my favorite potato dishes has always been Potatoes O’Brien.

Now substituting potatoes in a dish where potatoes aren’t the main ingredient is one thing, but trying to find a substitute for potatoes when they pretty much are the dish is a much more difficult task.

As difficult as it may be, think I pretty much nailed it with these Roasted Radishes .

Radishes really do have a terrific texture when they’re fried. They have that potato “mush” to them that I often find myself craving, and the flavor in this dish is actually so similar to potatoes that you’ll find yourself wondering if you didn’t use potatoes.

These fried radishes are a low carb side dish that really must be experienced to truly believe!

And did I mention how easy and quick this recipe is? If you didn’t already know this, I’m a huge fan of anything that can speed up a recipe while still getting the same end product.

That’s exactly why I went for the Air Fryer for this Radishes O’Brien recipe. The Air Fryer gives you that awesome roasted texture without soaking what you’re cooking in tons of oil, not to mention it doesn’t fill your house with that obnoxious frying smell you get from a standard deep fryer!

How Many Net Carbs Are In A Radish?

Radishes truly are a wonder-vegetable in the keto world. They make a fantastic substitute for potatoes, and they’re incredibly low in carbs!

An entire cup of sliced radishes only has 0.4 total carbohydrates, with half of that being dietary fiber.

That means that a cup of radishes only has 0.2 net carbs, making it one of the lowest carb veggies out there! So feel free to enjoy delightful Radishes O’Brien completely guilt-free!

Do You Peel Radishes Before Cooking?

Whether or not to peel radishes before cooking is entirely up to your personal preference. For this recipe, I just chop off the stem and the ends and chop them into bite-sized pieces.

I prefer to cook them with the peel still on to add a little more texture and crunch to the roasted radishes.

How To Make Roasted Radishes O’Brien

  1. Mix. In a large bowl, mix together the radishes, onions, peppers, garlic, salt and pepper. Ensure all the vegetables are about the same size so that they will cook evenly. Pour over the melted butter and mix well.
  2. Pour. Add the mixture directly into the Air Fryer basket.
  3. Cook. Set the Air Fryer to 360F for 20 minutes. Then, increase the temperature to 400F for 3 minutes to crisp up the edges of the vegetables.
  4. Oven. If you want to make this in the oven , use the broil setting on your oven. You will need to watch the radishes carefully to ensure they don’t burn, stirring from time to time.
  5. Nonstick. You can also try making this in a nonstick pan. In that case, add 2-3 tablespoons of oil or ghee to the pan, and then basically pan-fry your veggies in the oil on high heat until they crisp up.
  6. Even. Unless you like the occasional and awkward crunch of an uncooked vegetable, try your best to make sure that all the veggies are cut to about the same size. This will help them all cook evenly.
  7. Substitute. Radishes make a wonderful keto substitute for potatoes, so don’t be afraid to try them in other traditional potato recipes!

What Does Cooked Radish Taste Like?

While they may not taste EXACTLY the same, fried radishes are very similar to fried potatoes. Roasting them brings out their natural sweetness and the texture is spot on if you’re craving potatoes.

How Long Do They Last?

Typically, you can expect roasted radishes to last between 3 and 5 days in an air-tight container in the refrigerator. Once they are cooked, they will lose their heartiness and begin to change texture faster than an uncooked radish.

What Do You Serve Them With?

Basically, anything that you would serve with a roasted or baked potato will pair well with these roasted radishes.

Here are some of my favorite dishes to serve with them:

  • Air Fryer Chicken Tenders
  • Chicken Broccoli Casserole
  • Sous Vide Steak
