In about 30 minutes from start to finish, you can have beautiful Herb Roasted Chicken from your Air Fryer. It’s full of flavor and is so quick and easy, that you will want to make this weekly.

Ingredients You’ll Need
This recipe uses spices you probably already have in your pantry, so you can rest easy that if you have chicken you have the ingredients you need to make this recipe. It’s perfectly served with rice, but can be served with veggies or so many other side dishes to make it a complete meal as well.
- Salted butter or ghee
- Kosher Salt
- Smoked Paprika
- Dried Thyme
- Dried rosemary
- Garlic Powder
- Ground Black Pepper
- Lemon wedges
- Bone-in, skin-on chicken breast halves
Herb Roast Chicken | Air Fryer Herbed Roast Chicken
The air fryer makes the most crispy chicken with so little oil, and I love to cook my chicken in it. Just look at the beautiful golden color the chicken gets! The chicken cooks quickly so it stays juicy, so you get crispy skin and juicy meat which is the perfect combo.
But the one thing to note is that it’s actually difficult to make dry meats in the air fryer and get them to taste good. So for this recipe, I wanted to see about making chicken breast in the air fryer without drying it out. You MUST leave the skin on!
Do NOT take the skin off when cooking. If you don’t want to eat it afterward, you can take it off. But allow it to cook with the skin on so you get some natural basting from that chicken skin.
Also, be sure to use a meat thermometer so you aren’t overcooking the chicken. If you overcook it, it will definitely dry out.
Feel free to spray with oil while cooking to keep the surface moist and evenly browning if you need.
The herbs and spices used in this are paprika, thyme, rosemary, garlic powder and salt and pepper. Simple right?
Combine that with butter and some lemon wedges and that’s really all you need to make this recipe. Classic Herb Roast Chicken in very little time that comes out perfect in the air fryer.

Herb Roast Chicken
Ingredients

Instructions
- In a small bowl combine butter, salt, paprika, thyme, rosemary, garlic powder, and black pepper. Stir until thoroughly combined.
- Using a small sharp knife, carefully loosen the skin on each breast half, starting at the thin end of each half. Very carefully separate the skin from flesh, leaving skin attached at thick end of each breast. Divide herb butter into quarters. Rub one-quarter of the butter onto the flesh of each breast. Fold and lightly press skin back onto each breast. Rub remaining butter onto skin of each breast.
- Place chicken in air fryer basket. Set fryer to 375°F for 25 minutes. At end of cook time, use a meat thermometer to ensure the chicken has reached an internal temperature of 165°F.
- Let chicken rest for 5 to 10 minutes. Serve with lemon wedges.

Low Carb Soup | Instant Pot Sausage Kale Soup
This Low Carb Sausage Kale Soup is loaded with protein and flavor and is one of my favorite things to make. It’s sort of like having the best part of a spaghetti sauce but in a soup.
This Low Carb sausage kale soup is one of the heartiest soups you will ever make and you will love how meaty and delicious this is. It’s super easy to make because you don’t have to cook the sausage in advance, or dirty several different pots.

One of the reasons I love my Instant Pot, is the fact that it makes it so simple to make one-pot meals. I take advantage of this so often that my pots and pans feel neglected most of the time.
It’s a straightforward one-pot meals where you just pour in ingredients and cook all in one go.
When I’m eating low carb, especially if I’m trying to get back in the Keto saddle, I eat soups like this a lot. They’re very filling, they don’t feel like a diet food, and since there’s such a large amount of liquid I can eat a lot without consuming a lot of calories.
But of course, it’s not like we need a REASON to eat soup because…Soup! I love soup every which way.
Other ways to enjoy this Sausage Kale Soup
So you notice, it looks a lot like hearty spaghetti sauce, right? If you wanted to, you can definitely use it in place of spaghetti sauce, over noodles for non-keto, or over zoodles for keto.
If you find it too thin for your liking, you can add a cornstarch slurry for non-keto, or 1/4 teaspoon of xanthan gum sprinkled in, to help thicken the soup/sauce. (Spauce?)

Low Carb Soup | Pressure Cooker Sausage Kale Soup
Ingredients
- ▢ 1 pound ( 453.59 g ) bulk hot or mild Italian sausage , hot or medium
- ▢ 1/2 cup ( 160 g ) onions, chopped
- ▢ 6 ( 6 ) Garlic Cloves , sliced thinly
- ▢ 3 cups ( 268 g ) chopped kale , cut into ribbons stems removed
- ▢ 1.5 cups ( 223.5 g ) diced tomatoes , or 14.5 ounce can tomatoes (undrained)
- ▢ 1/2 cup ( 125 g ) Water
- ▢ 1/4 cup ( 6 g ) chopped fresh basil
- ▢ 1/2 teaspoon ( 0.5 teaspoon ) Kosher Salt
- ▢ 1 teaspoon ( 1 teaspoon ) Ground Black Pepper
For Finishing
- ▢ 2 tablespoons ( 2 tablespoons ) Tomato Paste
- ▢ 1/2 cup ( 120 g ) heavy whipping cream or canned coconut milk
- ▢ Basil leaves
Instructions
With your Instant Pot on Sauté mode, put olive oil to the pot. Add garlic and onions and stir.
Add the bulk sausage and break up any large pieces. You’re just trying to break up the sausage, not cook nor brown it.
Add kale, tomatoes, water, basil, salt and pepper. Stir and immediately close the lid.
Cook for 5 Minutes high pressure. Allow it to release pressure naturally for 10 mins and then release all remaining pressure.
Add tomato paste and heavy whipping cream or coconut milk and stir to incorporate. Garnish with fresh basil and serve.
Serve over shirataki noodles or regular pasta (optional) or just eat as a hearty soup
To reduce carbs further, reduce the kale which has about 22 gms net carbs in each cup
