Ok, so looking at the ingredients of this dish, you may be asking yourself, “Is this dish Italian or is it French?” Well, no matter how you answer, you’re correct!
A well-to-do Italian woman named Catherine de Medici loved Italy and Italian cuisine, but she loved her soon-to-be husband even more. Catherine married a French prince and relocated to France. She wanted to fuse her favorite flavors of both places and developed this delicious Chicken Florentine.
What Is Chicken Florentine Made Of?
- Chicken Breasts - Use thinly sliced chicken breast to make this high protein, low carb meal.
- Almond Flour - This creates a light coating on the chicken breasts that adds flavor and helps thicken the sauce.
- Olive Oil - Lightly fry the coated chicken breasts in olive oil for a slightly crispy texture.
- Butter - You can never go wrong with a little bit of butter in a cream sauce.
- Chicken Broth - The base of the sauce that makes it flavorful without being too thick.
- White Wine - Gives a touch of acid to help neutralize some of the fattiness of the heavy whipping cream and butter in the recipe.
- Spinach - Adds color, flavor, and nutrients to the pan.
- Heavy Whipping Cream - Makes the sauce delightfully creamy.
- Parmesan Cheese - Provides a salty, nutty flavor to the dish.

How To Make This One Pan Chicken Dish
There are several steps to this recipe, but they are so simple to follow–AND all done with one pan! Minimal dishes to clean up after dinner and ready in under 30 minutes? It doesn’t get much better than that.
- Mix the salt, pepper, and almond flour together.
- Press the thin sliced chicken breasts in the almond flour mixture.
- Allow the oil to heat in a skillet and place the chicken in the skillet to cook at medium/low heat until it reaches an internal temperature of 165F. Flip it to cook the second side half way through the cooking process.
- Remove the cooked chicken from the skillet and place on a cutting board to rest.
- Add the butter to the skillet and allow it to melt. Add in minced garlic and saute until fragrant.
- Slowly stir in the white wine, chicken broth, and herbs de Provence and allow it to reduce.
- Drizzle in the heavy cream and stir in the spinach.
- Remove the skillet from the heat so that the spinach doesn’t over cook and add the cooked chicken breasts back to the skillet.
- Serve a generous portion of chicken, cream sauce, and spinach and enjoy!

Tips And Tricks
- Don’t rush the sauce. Allow plenty of simmering time for the sauce. Just because it looks like it is the right consistency doesn’t mean that it is ready to eat. You will want to allow enough time for the alcohol to cook out of the white wine.
- Skip the wine. If you have an alcohol-free kitchen, you can still enjoy the flavors of this Chicken Florentine. Add a splash of vinegar or lemon to replace the acidity that the wine provides.
- Bulk up your plating. The protein and fat content of this dish makes it a wonderfully keto-friendly meal. If you want to make it even more filling, consider serving the chicken and spinach cream sauce over a bed of riced cauliflower , zoodles, or cooked pasta (if you’re not counting carbs).
