Is Goat Cheese Good Melted?
Absolutely. Goat cheese can be slightly clumpy when it is warmed. Don’t worry about it with this recipe, though. There are so many other ingredients inside of these pastry puffs, you won’t notice if the cheese is clumpy.
You get the sweetness of the fig, the saltiness of the prosciutto, and the light crisp of the puff pastry.
What Do These Goat Cheese Appetizers Taste Like?
These Goat Cheese Puffs not only look elegant, but they taste wonderful as well. The earthy, tart flavor of the goat cheese is complimented perfectly by the sweetness of the figs and the saltiness of the prosciutto.
Add in the aromatic, almost bittersweet flavor of the tarragon and you’ve got an irresistible dish that makes a perfect appetizer or snack for when you have company. Or you could of course just make a batch for yourself so you don’t have to share.

Have you ever had company coming over and wanted to make a fancy appetizer for a party but really didn’t feel like doing a lot of cooking?
If something looks fancy and tastes fancy, that must mean it takes a long-winded, difficult process to make it, right?
Actually, fancy doesn’t always mean difficult to make, and these Goat Cheese Puffs are the perfect example of how a seemingly fancy dish can actually be quite easy to make.
You simply cook the prosciutto in the microwave, crumble it, mix it with the other ingredients and fold it in some puff pastry.
I use frozen, store-bought puff pastry in this recipe, so it’s crazy easy to work with and takes no time to prepare.
After that, you just throw the prepared Goat Cheese Puffs into the air fryer for a whopping 10 minutes and they’re ready to go!
These deceivingly easy to make puff pastry bites are sure to wow your guests and keep you from having to spend all day in the kitchen cooking.
How To Make This Goat Cheese Appetizer
- Place the prosciutto slices on a dry paper towel. Lay another towel on top. Cook for 1 minute on high in the microwave. Remove the top paper towel and allow the prosciutto to cool (meat will be slightly flexible but will crisp upon cooling). When completely cool, crumble prosciutto and set aside.
- In a medium bowl , combine goat cheese, figs, crisped prosciutto, and tarragon. Stir until well-blended.
- In a small bowl , beat egg and water with a fork and set aside. Lightly flour a work surface. Roll out the thawed puff pastry sheet to a 12x12-inch square. Using a pizza cutter , cut into 16 (3x3-inch) squares and then brush the edges of the squares with the egg mixture.
- Place about 2 teaspoons of the goat cheese mixture in the center of each square. Fold the pastry over the filling to form triangles. Press the edges to seal. Crimp the edges with a fork.
- Arrange 8 of the pastry triangles in the air fryer , leaving as much space as possible in between them. Set air fryer to 400°F for 10 minutes or until pastry is golden brown. Repeat with remaining pastry triangles.
- Serve warm.
Tips And Tricks For Making Goat Cheese Puffs
- If you don’t own a pizza cutter , I highly recommend you get one for this recipe. It makes preparing the puff pastry so much easier and there are tons of other great applications for it.
- Make sure you leave plenty of space between the pastry triangles when you air fryer them and don’t try to cook them all in one batch! If they don’t have enough room for the air to circulate around them they will stay doughy, and nobody wants that.
- If you don’t have an air fryer you can put them on a cookie sheet and bake them in the oven at 400F for 12-15 minutes.

The only thing better than cheese is cheese with a crispy delicious outside like this Air Fried Phyllo Brie . The Air Fryer makes it crispy and delicious on the outside, all while the inside is gooey and melty cheese.
Finish it off with a little fig spread or jam , and your mouth will be happy! My mouth is watering just thinking of that flaky crust on the outside of that brie. Your guests will love this, and we don’t have to tell them how simple it is to make.
The only thing that’s tough about this phyllo brie recipe is working with the phyllo. Let’s be honest–it requires patience, which I don’t always have. So I asked Roger to do it.

Air Fried Phyllo Brie
Ingredients
- ▢ 8 sheets packaged phyllo pastry , at room temperature
- ▢ 8 ounces Brie cheese
- ▢ 2 tablespoons fig jam or cranberry jelly
- ▢ 1/3 cup melted butter
Instructions
- Place 1 sheet of phyllo pastry in a springform pan. Press the phyllo to conform to the shape of the pan. Lightly brush with some of the melted butter. I will admit we used Coconut Oil Pam but you use whatever you want.
- Place another sheet of phyllo on top, off-setting the corners of the sheets so you have some overlap. Lightly brush with some of the melted butter or Pam. Continue in this fashion until you have used up all 8 sheets, being sure to brush or spray liberally between sheets. Make sure that you are pressing the sheets on to the sides of the pan. You are using the pan as a mold to get a perfectly rounded pastry,
- Lightly scrape off some of the brie rind. We used a vegetable peeler to do this. Place the brie, remaining rind and all, into the center of the phyllo sheets. Spread with fig jam or cranberry jelly.
- Carefully fold over the phyllo sheets one sheet at a time, and brush with butter or spray with Pam. Press them down so the brie is well covered, ensuring the sheets stick together. Spray the top liberally when done.
- Set your airfryer to 390F for 15 minutes and check after 10 minutes to ensure it is cooking evenly.
- Once the outside is browned, the brie is melted, and it is ready to serve.
