Ingredients

  • ▢ 1 tbsp Olive Oil
  • ▢ 3 cups Mushrooms , cremini, shiitake, or portobello work great
  • ▢ 3 cloves Garlic , minced
  • ▢ 1 Onion , diced
  • ▢ 1 tsp Chili Powder
  • ▢ 1/2 tsp Cumin
  • ▢ 1/2 tsp Paprika
  • ▢ 1 tbsp Soy Sauce
  • ▢ 1 tbsp Lime Juice
  • ▢ 8 tortillas , taco-sized

Instructions

  • Clean and Slice the Mushrooms . Gently wipe the mushrooms with a damp paper towel to remove any dirt. Slice them into even strips or bite-sized pieces. Don’t wash mushrooms directly under water. They’ll absorb moisture and won’t sear properly.
  • Sauté the Veggies . Heat olive oil in a large skillet over medium heat. Add chopped onions and sauté until translucent. Stir in minced garlic and cook for 1 more minute until fragrant.
  • Cook the Mushrooms . Add the sliced mushrooms and cook without stirring for a few minutes. This allows them to brown and develop flavor. Then stir occasionally until mushrooms are soft and golden brown, about 8–10 minutes.
  • Add the Seasonings . Stir in chili powder, cumin, paprika, salt, and pepper. Splash in the soy sauce or tamari for umami and deglaze the pan. Finish with a squeeze of lime juice for brightness.
  • Warm the Tortillas . While the mushrooms finish cooking, warm your tortillas on a dry skillet or directly over a gas flame for a little char.
  • Assemble the Tacos . Spoon the mushroom filling into each tortilla and pile on your favorite toppings. Serve immediately while warm and juicy.
