If you’re familiar with making casseroles, none of these steps will be new. I absolutely love a great casserole recipe for busy nights or days I just don’t feel like cooking. Basically, all you need to do is mix the ingredients and bake them!

  1. In a large bowl, add all ingredients (reserving 1/2 cup cheddar cheese for finishing) and mix well.
  2. Pour the contents of the mixing bowl into a nonstick casserole dish.
  3. Cover the Chicken Bacon Casserole with the remaining cheddar cheese and bake.
  4. Remove from the oven, serve and enjoy!

  • Add more veggies. This casserole is already rich in vegetables with the addition of cauliflower and broccoli. If you’re wanting to increase your fiber intake or make this Chicken Bacon Ranch Casserole stretch a little farther, you can add in precooked diced squash, onion, or even a variety of peppers for heat and texture. Unless your veggies are diced into extremely small pieces, they will have a tough time cooking through in the small amount of time this casserole takes to bake. If you don’t have any of the precooked/microwavable bacon handy, you can air fry bacon and use it in the recipe as well.

I will definitely be making this butternut squash, again and again, this fall. It was far too delicious and far too easy to not make a few more times. It works as a great side dish, however, it also works great as a snack by itself.

  • ▢ 4 cups ( 560 g ) chopped butternut squash , about 1 inch squares
  • ▢ 2 tablespoons ( 2 tablespoons ) Oil
  • ▢ 1 tablespoon ( 1 tablespoon ) truvia , or 1-2 tablespoons brown sugar
  • ▢ 1 teaspoon ( 1 teaspoon ) Chinese 5 spice powder

Instructions

  • In a small bowl, mix together the butternut squash, oil, Truvia or sugar, and the Chinese 5 spice powder.

  • Place the squash in the airfryer basket. Set the airfryer to 400F for 15 minutes.
