I asked people in my TwoSleevers Facebook group what foods they considered comfort foods when they’re brainstorming Keto dinner ideas . Ooey, gooey, cheesy casseroles seemed to be at the top of the list for most folks.

Paradoxically, those are also the things that people struggle to make into keto side dishes.

If you can’t use cream of something soup, and you can’t use flour, how is one supposed to make a keto casserole ?

I’ll tell you how.

With lots of yummy cheese, heavy whipping cream, and other keto-friendly goodies.

Not only do they taste good, but they are keto, and because of all the fat in them, they tend to be very satisfying.

But in this case, I wanted something with even more flavor. And I wanted it fast. Enter bacon and jalapeno.

How Spicy Is This Cauliflower Mac and Cheese Keto Dish?

Well, you know, it’s all about the jalapenos. They can be deceptive. They all look the same, but some of them definitely pack a bigger punch than others.

I have a ridiculous but failproof way to tell which ones are too spicy and which ones aren’t spicy enough.

Eat a little bit of each of them when raw.

I know, I know, it sounds crazy. But if you want your keto mac and cheese to taste well-flavored but not crazy spicy, it’s worth the nibble or two to be sure you won’t be burning the roof off someone’s mouth.

When I made this, with the proportions specified below, I could taste the jalapeno, but the dish was not spicy.

I think all that cream and cheese offset some of the heat. Remember that a lot of the heat comes from the seeds, so if you want to keep the spice to a minimum, remove the seeds before adding the peppers.

Ingredients

  • ▢ 6 Bacon , chopped
  • ▢ 2 tablespoons diced jalapenos
  • ▢ 4 ounces Cream Cheese , room temperature, cubed
  • ▢ 1.5 cups Mexican Blend Shredded Cheese
  • ▢ 1/2 cup Heavy Whipping Cream
  • ▢ 3 cups riced cauliflower
  • ▢ 1/2 teaspoon Kosher Salt
  • ▢ 1 teaspoon Ground Black Pepper

Instructions

  • In a 12-inch sauté pan over high heat, start cooking the bacon. While the bacon cooks, in a large bowl mix together cauliflower, cream cheese, whipping cream, shredded cheese, salt, pepper. You do not need to get a homogenous mixture just mix it up as well as you can. Once the cheeses melt, it will be a lot easier to get an even mixture.
  • When the bacon is cooked, about 8-10 minutes, put in the jalapeños and sauté for one minute.
  • Add the cauliflower mixture stir well, place a lid. Lower the heat to medium-low. Cook for 8 minutes or until the cheese has melted. Stir once again.
  • You could also choose to microwave the bacon, put everything into a sprayed 8 x 8 baking dish, and bake at 3:50 for 15 to 20 minutes.

My recipe opts to use coconut milk as opposed to cream, resulting in a delicious dessert dish that is completely dairy-free and vegetarian-friendly . I used Truvia to sweeten it, so it’s low carb as well.

How to Make a Great Panna Cotta

  • Well dissolved gelatin . The biggest factor here is to ensure that the gelatin is extremely well dissolved. What you don’t want, are gelatin granules, and chewy gelatin bits left in there. I find heating the water definitely helps, but so does active stirring. Whisk the mixture well to ensure all the gelatin is well incorporated.
  • No acidic fruits You can add a few different fruits, but don’t add fresh pineapple, as the bromelain in pineapple interferes with the gelatin setting. Canned pineapple is usually okay.
  • Full-fat liquid This is really not the time to be using low-fat milk. The thicker the liquid, the better the panna cotta sets. A key tip to making panna cotta is to use a thick liquid and well-dissolved gelatin. If you want a change, use heavy whipping cream instead of coconut milk. If you use a low-fat liquid, you may need to increase the gelatin.
  • Spray the molds well This is so that you can pop out the panna cotta in one piece, making it look super elegant. I mean, either that or do what I do. Eat it directly from the container you set it in! One less dish to wash. What could possibly be wrong with that? What if after all this, your panna cotta doesn’t set? The thing about panna cotta though, is that it’s easy to fix. Just dissolve a little extra gelatin in water, mix it with your first batch, heating gently to ensure it is all well-mixed, and re-set it again.

So there’s no reason to be afraid of making this Panna Cotta recipe. These easy tips will ensure your keto coconut panna cotta sets beautifully each time.

There are two reasons this Panna Cotta recipe might not set correctly. Here are some things to consider:

  1. Your gelatin didn’t dissolve completely.

How Long Will Panna Cotta Last in the Fridge?

Panna Cotta should keep for about 2-3 days as long as it is stored in a glass or plastic food storage container or covered with plastic wrap.

Of course! Since this Panna Cotta recipe has to be refrigerated for at least 4 to 6 hours before serving, it’s the perfect make ahead dessert. You could even make it a couple of days in advance for the next time you have friends for family over.

Ingredients You’ll Need

  • 1/2 cup Cold Water - The cold water is used to bloom the gelatin. This means softening and activating it before heating. Blooming ensures the panna cotta sets properly with a silky, smooth texture.
  • 1 package Unflavored Gelatin (1/4 oz or 2.5 teaspoons) - Gelatin is the thickening and gelling agent that transforms the creamy mixture into a firm yet delicate custard-like dessert. It provides structure without adding carbs, making it perfect for low-carb recipes.
  • 13.5 ounces Full-Fat Coconut Milk - This serves as the rich, creamy base of the panna cotta. Full-fat coconut milk adds natural sweetness, velvety smoothness, and body. The fat content helps the dessert set beautifully and gives it a luxurious mouthfeel.
  • 1/8 cup Truvia - Truvia (a low-carb sweetener) provides sweetness without sugar. This amount subtly sweetens the panna cotta while keeping the carb count low, allowing the coconut and vanilla flavors to shine.

Panna Cotta Recipe | Keto Coconut Panna Cotta

Equipment

  • STAINLESS STEEL MEASURING CUPS
  • OVAL MEASURING SPOONS
  • GREENPAN SAUCEPANS
  • WHISK
  • 4 OZ RAMEKINS

Ingredients

  • ▢ 1/2 cup cold water
  • ▢ 1 package Unflavored Gelatin , 1/4 oz or 2.5 teaspoons
  • ▢ 13.5 ounces Full-Fat Coconut Milk
  • ▢ 1/8 cup Truvia
  • ▢ 1 teaspoon pure vanilla extract or coconut extract

Instructions

  • In a medium saucepan, place water, coconut milk, and Truvia and whisk well. Sprinkle gelatin a little at a time, whisking continually. You may see a few small lumps, but these will disappear once you heat the mixture. Cook over medium heat, whisking frequently until the gelatin and Truvia have dissolved.

  • Remove from heat and stir in coconut or vanilla extract.

  • Pour cream into six 4-oz serving dishes. Refrigerate for at least 4-6 hours for a firm panna cotta.

  • For a vegan option use agar agar instead of gelatin.
