This dish happened when I had a grapefruit that needed using up and an avocado that I really wanted to eat. Avocados are excellent sources of both fiber and fat–and of course, they are delicious and very filling.

Typically, I eat my avocado with salt and pepper, or I add shrimp and salsa to it as I did in this Mexican Shrimp Salad recipe. But sometimes you just need a quick no-cook salad with some tang and sweet and creamy texture in one bite.

What Goes Well With Grapefruit Salad?

I love to serve this Avocado Grapefruit Salad with my Creamy Chicken Salad recipe in the summer. They’re both no-cook recipes (I use pre-cooked chicken for this recipe in the summer), so I don’t have to heat up my kitchen in the heat of a Texas summer. But they’re both delightfully refreshing, and light and pair well together.

Substitutions You Can Make for Grapefruit and Avocado Salad

  • Use oranges rather than pink grapefruit . It works, but honestly, the oranges need to be either very tangy or very sweet. I like grapefruit better.
  • Pomelo is fantastic in this if you want to change it up.
  • Use apple cider vinegar or for a sweeter taste, use balsamic vinegar.
  • If you don’t like or have cilantro, you can use parsley instead.
  • Nuts are optional, so skip them if you want or need to.

  • ▢ 1/4 cup ( 11.25 g ) mint leaves , chopped
  • ▢ 1/4 cup ( 4 g ) Cilantro , chopped
  • ▢ 1/4 cup ( 24.75 g ) Pecans , chopped (optional)

Dressing:

  • ▢ 1/4 cup ( 56 ml ) Oil
  • ▢ 2 tablespoon ( 2 tablespoon ) Apple Cider Vinegar
  • ▢ 1 tablespoon ( 1 tablespoon ) lime juice
  • ▢ 1 tablespoon ( 1 tablespoon ) Dijon mustard
  • ▢ 1/2 teaspoon ( 0.5 teaspoon ) Splenda
  • ▢ 1 teaspoon ( 1 teaspoon ) Kosher Salt
  • ▢ 1 teaspoon ( 1 teaspoon ) Ground Black Pepper

Instructions
