What Do I Use To Season Air Fryer Chicken Legs?
Tempero baiano is a seasoning blend from Bahia, where it is used to add zest to savory dishes such as seafood, vegetables, soups, beans, stews, and sharp greens such as mustards or collards . It’s basically used as an all-purpose seasoning.
Brazil has been blessed with such cultural diversity over the years, and Brazilian cuoisome reflects this diversity.
The cuisine varies greatly by region, reflecting the country’s mix of native and immigrant populations.
Through the years Brazilian cuisine has been influenced by African and European (especially Portuguese) settlers.
The words themselves, Tempero Baino, mean Bahian seasoning.
Like many such seasonings, Tempero Bainano has evolved across regions and homes, and now there are probably many different ways to make it.
This recipe contains my version of it, which I hope you enjoy! If you like the flavors, use it with other meats and see what else you can spice up with it.

Carne Guisada has always been one of my favorite dishes to order at a Mexican restaurant, so I made my own version for the Instant Pot! It turned out fantastic and tastes absolutely authentic!

- Rich, savory gravy infused with tomatoes, spices, and aromatics for deep, comforting flavor.
- Hands-off cooking once everything is in the pot. It’s perfect for busy weeknights or low-effort dinners.
- Customizable heat level , allowing you to make it mild, medium, or spicy depending on your taste.
Instant Pot Carne Guisada delivers rich, tender, boldly seasoned comfort food in a fast, easy, and dependable way every single time.
Where Can You Find Authentic Carne Guisada?
Carne Guisada is a dish found commonly in Latin America as a staple of comfort food. However, the flavors of this beef stew transcend its origins and you can find delicious versions of it in parts of the United States as well.
What Is The Difference Between Carne Asada And Carne Guisada?
Though they’re both Mexican beef recipes , they vary quite wildly. Carne Asada is typically a skirt steak that has been marinated in lime juice, various Mexican seasonings and cut into long strips. Carne Guisada , on the other hand, is typically made from beef stew meat, has various veggies and is more of a Mexican stew .

What Is Carne Guisada Made Of?
This Mexican beef stew recipe is pretty straight forward. It combines the following ingredients to make one very delicious and satisfying main dish that you and your family are going to love.
- 1 pound Beef Stew Meat - This is the hearty base of the dish. The large chunks of beef become tender and flavorful under pressure, absorbing the spices and cooking down into a rich, savory gravy.
- 1/2 Onion - Onion adds aromatic depth and sweetness as it softens and melts into the sauce. It helps build the foundational flavor of the guisada.
- 1 Red Bell Pepper - Bell pepper adds mild sweetness, color, and moisture. It breaks down into the gravy and contributes to the classic Tex-Mex flavor profile.
- 2 Tomatoes - Tomatoes provide acidity, richness, and body to the sauce. They help create the thick, flavorful gravy that carne guisada is known for.
- 3 cloves Garlic - Garlic adds robust aromatic depth and enhances the savory complexity of the dish.
- 1 tablespoon Ground Cumin - Cumin offers warm, earthy flavor and is essential to the signature Tex-Mex taste of carne guisada.
- 1/2 teaspoon Dried Oregano - Oregano brings herbal notes that balance the richness of the beef and deepen the flavor of the gravy.
- 1–2 teaspoons Salt - Salt enhances all the flavors in the dish and seasons both the beef and the gravy. The range allows you to adjust based on taste.
- 1 teaspoon Ground Black Pepper - Black pepper adds mild heat and a sharp undertone that complements the deeper spices.
- 1 teaspoon Ancho Chile Powder - Ancho chile powder provides smoky, mildly spicy, slightly sweet depth. It’s an essential flavor in traditional carne guisada.
- 1 teaspoon Smoked Paprika - Smoked paprika adds a warm, smoky aroma and deepens the color and flavor of the gravy.
- 3/4 cup Water - Water creates the cooking liquid needed for pressure cooking and forms the base of the gravy. It absorbs the flavors of the vegetables and spices as the beef cooks.
- 1 tablespoon Corn Flour - Corn flour (or masa harina) thickens the gravy and adds a subtle, authentic corn flavor that enhances the traditional Tex-Mex profile of the dish.
How To MakeInstant PotCarne Guisada
- Blend. Blend together everything but the beef, water, and cornstarch.
- Place. Place beef cubes into your Instant Pot and cover with the blended veggies.

- Boil. Turn your pot on to Sauté and get the stew on a full boil. If you have a lot of liquid, boil for 5-10 minutes to reduce the liquid.

How To Make Slow Cooker Carne Guisada

- Make a cornstarch slurry (mix the cornstarch with water), and pour it into the boiling stew and stir until it thickens
Tips and Tricks
For the most tender beef and richest gravy, follow these tried-and-true tips to get the best results from your Instant Pot carne guisada:
- Use an immersion blender to blend the vegetables before cooking. It’s easier than picking the meat out.
- Serve with refried beans or rice if you’re not counting carbs.
- Make delicious Guisado tacos.
Variations
If you love classic carne guisada but want to change things up, try these delicious variations that adjust the flavor, heat level, or ingredients while keeping the dish rich and comforting:
- Spicy Carne Guisada - Add jalapeños, serranos, chipotle peppers in adobo, or extra ancho chile powder for more heat.
- Green Chile Carne Guisada - Swap the tomatoes for canned green chiles or tomatillos and use green chile powder for a tangy, vibrant version.
- Beer-Braised Carne Guisada - Replace part of the cooking liquid with Mexican beer to add depth, richness, and subtle malty sweetness.
What To Eat With Carne Guisada
Carne guisada is incredibly versatile, and these sides and accompaniments help soak up the flavorful gravy and turn it into a complete, satisfying meal:
- Flour Tortillas - Soft, warm tortillas are perfect for scooping up the beef and soaking in the sauce.
- Mexican Rice - A classic side that balances the richness with fluffy, seasoned grains.
- Refried Beans - Creamy beans complement the bold flavors of the guisada and make the meal heartier.
- Cilantro Lime Rice - Bright and citrusy, this rice cuts through the richness of the stew.
How Long Does It Last?
Instant Pot carne guisada lasts 3 to 4 days in the refrigerator when stored properly in an airtight container.
The tender beef and thick, savory gravy hold up well, and the flavors often deepen as it sits, making the leftovers even more delicious.
Can You Freeze It?
Yes, you can definitely freeze carne guisada. In fact, it freezes very well thanks to its rich gravy and tender chunks of beef.
Allow the stew to cool completely, then transfer it to airtight containers or freezer-safe bags, leaving a little room for expansion.
Carne guisada will keep in the freezer for up to 3 months without losing flavor. When you’re ready to enjoy it, thaw it overnight in the refrigerator and reheat it on the stovetop or in the microwave.
