Blueberry Ice Cream | A Delightfully Low Carb Icecream Recipe!
There are few fruits quite as delicious and refreshing as blueberries. It’s definitely one of my favorite fruits, so I try to work it into other recipes whenever possible. So when I was whipping up some cheesecake ice cream to try and stave off the Texas heat, I knew I just had to add some blueberries into the mix.
The best part about this low carb Blueberry Frozen Ice Cream is that it’s not a super difficult recipe to whip together. The longest waiting period will be when it’s freezing.
Outside of that, there’s not much to it outside of mixing. This is why it’s one of my main go-to sweet treats.
Ingredients You’ll Need For This Blueberry Ice Cream Recipe
- Frozen Blueberries , thawed, undrained
- Truvia
- Xanthan Gum
- Cream Cheese , cubed and softened
- Sour cream
- Heavy Whipping Cream
- Lemon Extract
Are Blueberries Low Carb?
Certain berries are known to be lower in carbohydrates than others. Blueberries are included in that list. If you’re wondering how many net carbs in blueberries, you’ll be happy to know there are only 12 grams of net carbs in 3.5 oz of blueberries.
You can, of course, substitute any sort of berry in this dessert. Berries are naturally low in carbs so it’s an easy sub.

How To Make Blueberry Ice Cream
- In a microwave-safe bowl, heat blueberries, water, Truvia and xanthan gum to boil for 2 minutes or until it boils and thickens. Refrigerate 15-20 min. or until completely cooled.
- Using a whisk attachment on a stand mixer, process cream cheese, sour cream, and heavy whipping cream until they are fluffy.
- Spoon into 1-1/2-qt. freezer-proof container. Top with spoons full of the blueberry mixture; swirl gently but deeply with a spatula so you get swirls of blueberry with swirls of ice cream. Or you know, just mix it all together and call it a day.
- Freeze 4-5 hours until firm.
Tips for Making Keto Blueberry Cheesecake Ice Cream
- You can use the first half of this recipe to make a lovely berry compote and pour that over this homemade Keto Ice Cream Recipe as well.
- Use any type of berry that you like for this recipe.
- Plan to eat this recipe within a day or two. This homemade low carb ice cream is best eaten fresh, as it gets a little grainy once you refreeze it–but it’s still tasty!
- You may need to let leftovers sit on the counter to warm up and soften a little before serving.
- You could also freeze this in large ice cube trays such as THESE for portion control. In this case, just mix the two in each cube.
- If you prefer a softer texture, freeze in ice cube trays, Then remove the cubes and blend in a blender, adding a little bit of half and half to keep the blades moving.
- You could also choose to churn the blueberry mixture and the ice cream mixture together in this ice cream machine .

This Keto Lemon Mousse is smooth, sweet, tangy and absolutely yummy! Not to mention it’s low carb and incredibly simple and quick to make.

Why You’ll Love This Lemon Mousse Recipe
One of my favorite desserts to make has got to be mousse. It’s such a wonderfully smooth, creamy, and simple dessert to make that I find myself making it on a fairly regular basis. Not to mention it’s quite easy to make the dessert low carb, which is great for those of us living a keto lifestyle.
One of my favorite things about this Keto Lemon Mousse is that it only takes five ingredients to make. You’ll most likely have most of the ingredients on hand, and if not, it will cost you next to nothing to grab the ingredients at the store.
This recipe only takes a few minutes to whip together. The longest part is letting it refrigerate for a couple of hours before consuming, but let me assure you, it’s well worth the wait!
I always like to make a large batch so that I can have some now, then put the rest back in the fridge for later use. I normally like it to last a few days before I end up creating another dessert to curb my sweet tooth.
How To Make Keto Lemon Mousse
- In a stand mixer with a paddle attachment, mix together all ingredients until smooth and creamy.
- Refrigerate for 1-2 hours and serve.
Tips for Making Keto Lemon Mousse
- Mascarpone cheese is sweet, soft cheese. If you can’t find it, substitute it with ricotta cheese.
- If you don’t like the flavor of lemon, you can also make a chocolate mousse that’s very similar to the texture and carb count of this lemon version.
- You can vary the flavors for this mousse, by using orange extract and orange zest for example. Almond mousse with just the extract is also fabulous.
- This is a very rich sweet treat. Start with 1/4 cup at most per person as it can be very filling.
- You can also freeze this in small truffle molds . When it’s frozen, pop them out of the molds and store them in the freezer. It’s great for portion control!
How Long Does It Last?
This mousse can last several days in the refrigerator in an air-tight container. For best results, try to enjoy within 3-4 days before the ingredients begin to separate.
What To Eat With This Low Carb Mousse
Lemon mousse is VERY filling, so I often just use a spoon to enjoy it. Adding anything else seems to be overindulgent. That being said, if you’re consuming less than a serving, it can be quite tasty when it is used as a “frosting” on my keto pound cake !

- ▢ 8 ounces ( 226.8 g ) Mascarpone Cheese , room temperature
- ▢ 1 cup ( 238 g ) Heavy Whipping Cream
- ▢ 1/2 cup ( 122 g ) Lemon Juice
- ▢ 1/3 cup ( 0.33 g ) Truvia
- ▢ 1/4 teaspoon ( 1/4 teaspoon ) Kosher Salt
Instructions
In a stand mixer with a paddle attachment, mix together all ingredients until smooth and creamy.
Refrigerate for 1-2 hours and serve.
