Full disclosure–I used to have McDonalds (r) as a client. But they did not give me their secret recipe.

So I have no real idea what’s in the McDonald’s Sauce Recipe. But I can tell you that whatever it is I cobbled together tastes EXACTLY like McDonald’s secret sauce!

Is Big Mac Sauce the Same as Thousand Island Dressing?

I know a lot of people wonder if McDonald’s Big Mac Sauce is exactly like Thousand Island Dressing.

Based on my experiment, I don’t think it is. This keto Big Mac Sauce has far fewer ingredients than Thousand Island, which is good. Less is better as far as I’m concerned.

What Does This Hamburger Salad Taste Like?

Like a big mac.

No, really! It does. It’s been so long since I’ve had a Big Mac that I asked my friend Jennifer to taste test it. And then, hundreds and hundreds of people made it and they all agree–it tastes just like a Big Mac.

I mean, what’s not to love? Not only does it taste just like a Big Mac, but it’s homemade, low carb, keto–and best of all, the various components can be made ahead of time.

Anytime you can have homemade food that’s essentially like Keto Fast food - I’m voting for that.

Ingredients You’ll Need

Trust me when I say that this secret sauce shouldn’t be a secret at all. It’s so simple to make, everyone loves it, and it’s made with ingredients you likely already have in your fridge.

Here’s what you’ll need to make this tasty Big Mac Salad recipe:

Big Mac Sauce

  • Mayonnaise
  • Prepared Mustard
  • Dill Pickles
  • White Vinegar
  • Onions
  • Swerve
  • Smoked Paprika

Salad

  • Lean Ground Beef
  • Kosher Salt
  • Ground Black Pepper
  • Chopped iceberg lettuce
  • Sliced Onions , cut in half
  • Sharp cheddar cheese
  • Dill Pickles

How To Make This Big Mac Salad Recipe

  1. First, gather the ingredients for your hamburger salad.

  1. While the ground beef browns, put together the Big Mac Sauce . Start by mixing the mustard, mayo, and vinegar.

  1. Assemble the Big Mac Salad . Start with lettuce at the bottom. Add cheese, then add ground beef. Top with onions and pickles. Put the dressing on.

At this point, you can either toss the hamburger salad (as in, MIX it, not toss it into the trash) or save it like this for a while. Since the dressing is sitting on top, it won’t make your lettuce all soggy and wilted.

  • The sauce will keep for at least a week in the fridge, so make double–or quadruple! Not only does it get better with time, but it also works well with a variety of salads and grilled meats. Great for dipping grilled chicken as well.

I ate this salad straight from the fridge. You would think cold ground beef wouldn’t taste that good, right?

It was actually MOST EXCELLENT. So one thing you could do is turn this low carb Big Mac Salad into a Mason Jar Salad and take it for lunch.

The attached video shows you how to do this. But basically layer in exactly this order: Lettuce, Cheese, Ground Beef, Onions, Pickles, Big Mac Sauce Dressing

Then, when you’re ready for your Keto Big Mac Salad , either shake up that jar well or just tip everything into a bowl, stir, and enjoy.

Can I Freeze This Big Mac Salad Recipe?

Nope, you can’t. That lettuce would just absolutely die if you did that. You CAN, however, make up the meat and the dressing ahead of time.

The dressing will keep for a week in your refrigerator if you cover it well.

Big Mac Sauce

  • ▢ 3/4 cup ( 224 g ) Mayonnaise
  • ▢ 4 tsp ( 4 tsp ) Prepared Mustard
  • ▢ 2 tbsp ( 2 tbsp ) Dill Pickles
  • ▢ 1 tablespoon ( 1 tablespoon ) White Vinegar
  • ▢ 1 tablespoon ( 1 tablespoon ) onions, chopped
  • ▢ 2 teaspoons ( 1 teaspoons ) Swerve
  • ▢ 1/2 teaspoon Smoked Paprika

Salad

  • ▢ 1 lb ( 453.59 g ) Lean Ground Beef
  • ▢ 1 tsp ( 1 tsp ) Kosher Salt
  • ▢ 1 tsp ( 1 tsp ) Ground Black Pepper
  • ▢ 4 cups ( 288 g ) chopped iceberg lettuce
  • ▢ ½ cup ( 80 g ) Sliced Onions , cut in half

  • Heat a 10-inch sauté pan over medium heat. Add the ground beef, smash it to break up the clumps, and cook until it’s almost cooked through. Add salt and pepper and finish cooking it all the way.
  • While the ground beef is browning, chop lettuce. Slice onions and then cut into half. Roughly chop pickles..

What Makes This Bacon Wrapped Stuffed Chicken So Dang Good?

If it’s one thing I love, it’s bacon and wrapping everything in bacon. Bacon is one of those ingredients that can be added to a dish and it always seems to make it better. Of course, not all dishes, but pretty close.

This Bacon Wrapped Stuffed Chicken recipe is no different. They quickly moved to the next level when I decided to wrap them in bacon. They’re now one of my favorite dinners to make.

The crispy bacon on these Bacon Wrapped Stuffed Chicken Breasts pairs well with the soft, juicy chicken . The flavor combination, all the way around with this dish, is perfection.

Did I mention this dish is keto-friendly ? I know, it surprises me when dishes that are this good can be included on a diet. However, keto is all about good fats and a level portion of protein for the day. Keto is set up to burn fat, not carbohydrates, which is why it’s so effective at removing inches and weight.

I absolutely love bacon. I use it a LOT. Like in this keto bacon chicken popper dip recipe , or in the keto cauliflower bacon mac and cheese .

Bacon pairs so well with this chicken dish that it makes me love it even more. I have to say, I make a lot of dishes that include wrapping the dish in bacon.

However, I would have to say that this Bacon Wrapped Stuffed Chicken recipe is one of my favorites and takes very little effort to throw together.

Can you make Chicken Breast in the Air Fryer?

So it’s not the easiest thing to get right in an air fryer. That’s because chicken breast is lean to start with, and to get a good result in the air fryer, you have to have a little fat on or in the food.

You can very easily overcook chicken breast in the airfryer. I find that two things help with keeping it from overdrying

  1. Leave the skin on OR
  2. Wrap in bacon
  3. Do not overcook it! A Meat thermometer will be your friend.

Chicken breast in the air fryer is not that easy to make without making dry chicken. But in this recipe, the bacon bastes that chicken breast so you get a much better result.

Definitely one of those fancy dishes that aren’t really fancy as far as time is concerned. I have no doubt you’ll enjoy it as much as I do.

How To Make Bacon Wrapped Stuffed Chicken

  1. Make the filling: In a small bowl , mix together spinach, cream cheese, Parmesan cheese, jalapenos, salt and pepper.
  2. Stuff the chicken breasts : Place the butterflied chicken breasts on a flat surface. Spread the cream cheese mixture evenly across the two breasts.
  3. Roll up chicken: Starting with the narrow end, roll up the chicken breast, ensuring the filling stays inside.
  4. Season the chicken: Dust each of the breasts with Cajun seasoning , patting it in to ensure it sticks to the chicken breast.
  5. Bacon wrap! : Wrap each chicken breast in 3 slices of bacon each. Place the wrapped chicken breasts in the air fryer basket.
  6. Air Fry : Set fryer to 350°F for 30 minutes. Use a meat thermometer to ensure the chicken has reached an internal temperature of 165F.

Tips And Tricks For Making Bacon Wrapped Stuffed Chicken

  • Pound the breast . The trick to getting great Bacon Wrapped Stuffed Chicken is to pound the chicken breasts so that they cook quickly. This tenderizes the chicken, which makes it less tough and easier to cook.
  • Use thighs: You can also use de-boned chicken thighs for this recipe.
  • Lazy variation : Sometimes when I’m feeling terribly lazy, I’ve been known to just stuff these with flavored cream cheese and thawed spinach and call it a day. Low carb deliciousness with very little work!
  • Toothpick the bacon : If you’re having trouble with your bacon staying in place, you can try using a toothpick to hold it in place. Once cooked, the toothpick is easily removable and the bacon shouldn’t move after that.

  3. Simply open the chicken up like a book.
  4. Pound the chicken flat with a meat tenderizer or other large, blunt object.

Bacon Wrapped Stuffed Chicken

Equipment

  • Gowise Air Fryer
  • Meat Thermometer

Ingredients

  • ▢ 2 large chicken breasts , butterflied and pounded thin to about 1/2 inch thickness
  • ▢ 1/2 cup Frozen Spinach , thawed & drained
  • ▢ 1/4 cup Cream Cheese , room temperature
  • ▢ 1/4 cup shredded Parmesan cheese
  • ▢ 2 tablespoons Jalapeño Peppers , chopped
  • ▢ 1 teaspoon Ground Black Pepper
  • ▢ 1/2 teaspoon Kosher Salt
  • ▢ 6 slices Bacon
  • ▢ 4 teaspoons Cajun Seasoning

Instructions

  • In a small bowl , mix together spinach, cream cheese, Parmesan cheese, jalapenos, salt and pepper.

  • Place the butterflied chicken breasts on a flat surface. Spread the cream cheese mixture evenly across the two breasts.

  • Starting with the narrow end, roll up the chicken breast, ensuring the filling stays inside.

  • Dust each of the breasts with Cajun seasoning , patting it in to ensure it sticks to the chicken breast.

  • Wrap each chicken breast in 3 slices of bacon each. Place the wrapped chicken breasts in the air fryer basket.

  • Set fryer to 350°F for 30 minutes. Use a meat thermometer to ensure the chicken has reached an internal temperature of 165F.

  • Pound the breast . The trick to getting great Bacon Wrapped Stuffed Chicken is to pound the chicken breasts so that they cook quickly. This tenderizes the chicken, which makes it less tough and easier to cook.

  • Use thighs: You can also use de-boned chicken thighs for this recipe.

  • Lazy variation : Sometimes when I’m feeling terribly lazy, I’ve been known to just stuff these with flavored cream cheese and thawed spinach and call it a day. Low carb deliciousness with very little work!
