Do Stuffed Mushrooms Have Carbs?

Yes, keto stuffed mushrooms do still have carbs. Luckily, I modified this recipe to have as few carbs as possible while still giving all of your favorite flavors.

Can You Have Mushrooms On Keto?

Not only can you have mushrooms while living a low carb lifestyle, but they’re also one of the most popular foods to eat while eating keto.

Portabella mushrooms only contain a little over 2 net carbs per serving while being extremely low in calories. Each Portabello mushroom only contains around 15 calories, depending on size.

How Do You Get Moisture Out Of Mushrooms Before Stuffing?

When cooking stuffed mushrooms, many people choose to partially dehydrate them before stuffing them. I’ve personally found that the texture difference in pre-roasting them before stuffing them isn’t significant enough to warrant the extra step or time.

The moisture from the cream cheese and the spinach softens the mushroom caps a bit, so pre-roasting doesn’t make a substantial difference in the bite.

Ingredients Needed

  • Portobello Mushrooms - I prefer portobello when I’m stuffing mushrooms because they’re larger and I feel like I get more “bang for my buck” with prep work.
  • Baby Spinach - Is tender and cooks up quickly when stuffed inside of the mushrooms.
  • Cream Cheese - Melts up deliciously creamy and pairs well with the meaty flavors of the portabello mushrooms.
  • Mozzarella Cheese - Creates a bit of a “crust” on top of the mushroom caps when they are air fried to give the illusion of a breadcrumb topping while still keeping each bite low carb.
  • Olive Oil Spray - This helps crisp the outside of the mushrooms to give a depth of texture in each bite.
  • Garlic
  • Salt
  • Pepper

How To Make Air Fryer Stuffed Mushrooms

  1. Clean the mushrooms and carefully remove the stems from the mushroom caps.
  2. In a large bowl, mix together cream cheese, half of the mozzarella cheese, minced garlic, salt, pepper, and chopped spinach.
  3. Spoon the filling into the mushroom caps and spray the mushrooms lightly with olive oil.
  4. Place the mushrooms into the air fryer basket and air fry for 10 minutes.
  5. Two minutes before the cooking time is complete, add reserved mozzarella cheese and complete the cooking cycle.
  6. Carefully remove the stuffed mushrooms from the air fryer basket and serve.

Variations

  • Make them meaty. If you want to increase the amount of protein per serving, you can add pre-cooked sausage to the cream cheese, mozzarella, and spinach mixture before air frying.
  • Spice them up. Mix in a few tablespoons of diced green chilis for a slight kick of heat.
  • Add some crunch. If you’re not worried about carbs, you can top the stuffed mushrooms with a breadcrumb and parmesan cheese mixture. Add this to the top in the last few minutes of cooking to toast the topping to perfection.

How Long Do You Cook Frozen Stuffed Mushrooms In The Air Fryer?

If you are pressed for time or happen to just love the frozen stuffed mushrooms you can pick up at the local grocer, you can also cook these in your air fryer.

One of the biggest advantages of making anything in the air fryer is how quickly it cooks. To prepare frozen stuffed mushrooms in the air fryer, heat your air fryer to 375F and cook for 10 minutes.

What Do You Serve With Them?

Choosing what to serve with air fryer stuffed mushrooms completely depends on how you’re choosing to enjoy them. If they’re being eaten as an appetizer , you’ll likely pair them with another appetizer for a party or tailgating. If you’re having them for a low carb vegetarian dinner, you’ll likely be looking for a fresh-flavored side dish.

How Long Do They Last?

Mushrooms are essentially a sponge, so they have a tendency to become very soft if exposed to any outside moisture. With the moisture the filling ingredients can excrete during the cooking process, these air fryer stuffed mushrooms can become soggy if stored for too long.

For the best bite, I would suggest enjoying these straight out of the air fryer. If you do happen to have a few leftovers to enjoy later, I would recommend eating them within a day or two.

This easy Low Carb Ground Beef Stroganoff combines onions, garlic, mushrooms, and sour cream for an easy, low carb meal. It’s delicious served over buttery zucchini noodles .

Beef stroganoff with sour cream is a dish that is easily adapted for a keto or low carb diet. The basic dish is naturally low carb , usually containing just meat, vegetables , and sour cream.

Beef Stroganoff Ingredients

The ingredients for beef stroganoff are nearly identical whether you are talking about a traditional or keto recipe. This one contains:

  • Onion
  • Garlic
  • Mushrooms
  • Ground beef
  • Worcestershire sauce
  • Dijon mustard
  • Sour cream

Many recipes use flour to thicken the sauce . But I’ve found that you can get a nice, thick sauce just by simmering the mixture in a skillet to reduce the liquid and then stirring in sour cream (which thickens it right up).

Traditionally ground beef stroganoff is served over buttery egg noodles, but to keep this dish low in carbs, I simply swap those out for zucchini noodles.

Hamburger Stroganoff: A Great Go-To Keto Meal?

If you’ve got ground beef on hand, this keto beef stroganoff can be on the table in a flash. It is the best kind of comfort food because it is quick to make, uses a short list of common pantry ingredients, and is full of flavor. You get all the comfort food satisfaction without a lot of carbs.

The rich creamy sauce gets wonderful texture and flavor from fresh mushrooms, onions, and garlic. The creaminess comes from sour cream and butter, not canned soup! It’s hearty, meaty and totally satisfying.

How To Make Ground Beef Stroganoff

This is one of the easiest meals you can make!

  1. Saute the vegetables. Cook the onions, garlic, and mushrooms in oil in a skillet on your stovetop .

  1. Reserve half of the vegetable mixture. Remove half of the onion-mushroom mixture and reserve for later.

  2. Add the beef. Stir in the beef and seasonings, cover, and cook.

  1. Finish with the sour cream. Add the sour cream and the reserved onion-mushroom mixture.

  2. Serve the meat and sauce over the zucchini noodles.

Tips And Tricks For Making Beef Stroganoff

• Saute all of the onions, garlic, and mushrooms at the beginning, but remove half before adding the ground beef. This creates rich foundational flavors in the dish, and also bright, fresh top notes.

• Steam the zucchini noodles while the beef is cooking.

• Toss the zucchini noodles with a touch of butter to give the noodles flavor and substance.

• Stir in the sour cream only at the very end of cooking to prevent it from curdling or separating.

What To Serve With Low Carb Hamburger Stroganoff

This is a fantastic hamburger stroganoff recipe since it has plenty of protein, fat, and veggies. If you want to change it up, you can serve the beef and sauce over shirataki noodles. Or serve it over cauliflower rice or cauliflower mash instead of the zucchini noodles.

Low Carb Beef Stroganoff

Equipment

  • GREENPAN SAUCEPANS

Ingredients

  • ▢ 1 tablespoon Oil
  • ▢ 1/2 cup Onions , diced
  • ▢ 1 tablespoon Garlic
  • ▢ 1 pound Lean Ground Beef
  • ▢ 1.5 cups Mushrooms , chopped
  • ▢ 1 tablespoon Worcestershire Sauce
  • ▢ 1 tablespoon Dijon Mustard
  • ▢ 1 teaspoon Kosher Salt
  • ▢ 1/2-1 teaspoon Ground Black Pepper
  • ▢ 1/2 cup beef broth , or water
  • ▢ 1/4 cup sour cream
  • ▢ 2 large Zucchini
  • ▢ 1 tablespoon Butter

Instructions

  • Heat a 10 inch sauté pan over medium high heat. To the hot pan, add the oil. When the oil is hot, add onions and garlic and cook until onions are translucent, about 2 minutes. Add mushrooms and cook for 1-2 minutes. Remove half of this onion and mushroom mixture and set aside to mix in at the last minute.

  • Add ground beef to the remaining vegetables, and break up the lumps. Add Worcestershire sauce, mustard, broth, salt and pepper.

  • Cover and cook until the beef and vegetables are cooked through, about 5 minutes

  • Meanwhile, using a vegetable peeler, peel the zucchini into long ribbons. Place ribbons in a microwave safe bowl, add 2 tablespoons water. Cover and steam for 2 minutes. Remove and toss with 1 tablespoon butter.

  • When the beef is done, remove lid, and turn down the heat to low. Slowly stir in sour cream a little at a time and allow the mixture to gently bubble and thicken. Add back the reserved onion and mushroom mixture and stir in.

  • Serve over zucchini ribbons

  • Buy ready made zucchini noodles or use shirataki noodles instead.

  • Riced cauliflower also makes a wonderful accompaniment to this dish.
