Why You’re Going To Love Southwestern Roasted Corn
There’s not much better in life than some amazing vegetables with cheese. Southwestern Roasted Corn is an amazing recipe you can make right in your Air Fryer.
Okay, confession time. I was trying to get lovely roasted corn in my air fryer. That didn’t work out so well. But once I tasted this, I found I didn’t really care about my original plans because this might have been better than what I’d been planning.
What really makes this dish, is the addition of fresh cheese and herbs at the end. If you hate cilantro, add parsley or whatever else you want. But that final burst of freshness and tang, with the cheese melting ever so slightly from the heat of the vegetables—mmm yum!
I also found that you’re better off using frozen corn. Not only is it faster than having to defrost the corn, but it also allows the corn to cook slower than the other vegetables so they all get done simultaneously.
Is It Healthy To Eat Roasted Corn?
What is “healthy” for one person may not be healthy for someone else. It’s always important to consider your dietary restrictions before digging into a new recipe.
That being said, corn is loaded with Vitamin C and is great for eye health. It is also fairly low in calories and extremely filling. So, if you’re looking for a low calorie side dish, roasted corn is a fantastic option.
Is It Better To Boil Or Roast Corn?
Honestly, it all depends on your personal preference. I love corn, no matter how it is prepared. If you’re looking for a great side dish to pair with your favorite Mexican main course, roasted corn is definitely the way to go.

Ingredients You’ll Need
- Frozen Corn Kernels
- Onions, chopped
- Diced mixed bell peppers
- Diced jalapeno pepper
- Ground Cumin
- Lemon Juice
- Kosher Salt

How To Make Roasted Corn
- In a large bowl, combine corn, onions, bell peppers, and jalapenos, and stir.
- Sprinkle in 1 tablespoon lemon juice and add all the spices. The lemon juice will help the dry spices stick to the vegetables.
- Pour the spiced vegetables into the air fryer basket.
- Set your air fryer to 400F for 10 minutes and stir halfway.
- Add queso fresco (or cotija, or feta cheese), chopped cilantro, and the remaining 1 tablespoon of lemon juice, and mix well before serving .
How Long Does It Last?
This roasted corn recipe is great to make as part of your weekly meal preparation. If kept in an air tight container in the refrigerator, you can expect it to stay delicious for up to 5 days after it is prepared.

- ▢ 1 cup ( 149 g ) diced mixed bell peppers

Air Fryer Cornish Game Hens
Cooking game hens can be tricky when you do them in the oven. They dry out quickly if you’re not careful. Making Air Fryer Cornish Game Hens is an absolute breeze and they turn out great. They have a great crispy outside and a juicy, tender inside.
How To Make Air Fryer Cornish Hen
- Cut in half longways . This makes sure they don’t have to cook as long, and that they’re crispy and delicious on all sides.
- Use cilantro roots . The foodie me knows that’s where most of the flavor lies. Use every bit of your cilantro stalks for this recipe for sure.
- Add lemongrass paste . If your grocery store doesn’t carry this paste, just chop, crush and mash some fragrant, fresh lemongrass and add that to the marinade.
How Do You Know When Cornish Hens Are Done?
As with all poultry, you’ll want to make sure the chicken is cooked with a meat thermometer to an internal temperature to 165 degrees Fahrenheit. If you don’t have access to a meat thermometer, ensure the juices run clear when you cut into the meat.
Can I Cook A Frozen Cornish Hen?
Technically, yes. However, I wouldn’t recommend it. Since I suggest splitting the air fryer cornish game hens in half before cooking, this makes it more difficult. And kind of dangerous.
If you choose to do this, make sure you’re following the cooking guidelines I suggested above.

Maybe my fondness of the Thai street food was due to the fact that I got the chance to eat CONSTANTLY. It felt like I was always snacking.
I didn’t feel too guilty about it at the time, though. Everything I ate was fresh food. Lots of fruits and veggies. And contrary to what you may think, it was all utterly safe to eat.

Low Carb Air Fryer Cornish Game Hens Thai Gai Yang
Ingredients
- ▢ 1 cup ( 16 g ) fresh cilantro leaves and stems , trimmed and chopped coarsely
- ▢ 1/4 cup ( 58 g ) Fish Sauce
- ▢ 8 ( 8 ) Garlic Cloves , peeled and smashed
- ▢ 2 tablespoon ( 2 tbsp ) stevia
- ▢ 1 Jalapeño Peppers , chopped
- ▢ 2 tablespoon ( 2 tbsp ) lemongrass paste
- ▢ 1 tablespoon Soy Sauce
- ▢ 2 teaspoon ( 2 tsp ) Ground Black Pepper
- ▢ 2 teaspoon ( 2 tsp ) Ground Coriander
- ▢ 1 teaspoon ( 1 tsp ) Kosher Salt
- ▢ 1 teaspoon ( 1 tsp ) Turmeric
- ▢ 2 whole ( 2 whole ) Cornish Game Hens , giblets removed, split in half length-wise
Instructions
- Place the four halves of the Cornish game hens into a large bowl.
- In a blender jar, add the cilantro, fish sauce, garlic, sugar, lemon grass paste, pepper, coriander, salt and turmeric, and process until smooth. Pour the mixture over the chicken and mix very well.
- Allow the chicken to marinate for at least 30 minutes or up to 24 hours in the refrigerator.
- Place the game hen halves into the basket of the air fryer in a single layer. Set the air fryer to 400ºF for 20 minutes.
- Test with a meat thermometer to ensure the chicken has reached an internal temperature of 150ºF before serving.
