Here’s another piece of very good news about my African Merguez Sausage recipe –which is that it was featured on Foodie Fanatic , which is a collection of some extremely talented bloggers. I cannot believe my best meatball recipe was included in this lot.

Each blogger focuses on a particular niche, and I will be focusing on contributing easy Keto meals from time to time to the site. So I submitted this low carb African Merguez Sausage as my first one, and I’m looking forward to adding many more to their collection over the next few months and years.

I’m all about using spices in different combinations to introduce your palette to a variety of cuisines. I also know that if you are cooking for someone with allergies, it’s often difficult to trust purchased food, which means you miss out on a lot of different types of tastes. This recipe is Dairy-Free , Nut-Free , and Gluten-Free . It makes it a front runner if you’re cooking with someone with food allergies.

This is why I make my own German Bratwurst and my own Thai Curry Sausage , as well as great Keto meatballs . I also love making Kofta Kababs . In fact, one day I think I’ll make a platter of kebabs from around the world, invite a few friends over, and all of us can sit around and pig out on these wonderful low carb appetizers .

What Is The Difference Between Chorizo And Merguez Sausage?

Both sausages are incredibly flavorful and a wonderful choice to spice up any meal. While similar in use, they do have their differences. Chorizo is a more paste-like consistency due to its higher fat content and is often prepared to be a crumbled consistency.

Merguez sausage has a lower fat content and is more similar in consistency to a traditional pork sausage or ground beef. It is often served in meatball form, or cut into thin slices for serving.

What Kind of Meat Do You Use To Make These Keto Meatballs?

Merguez is traditionally made with ground lamb and is put into casings. but I made this one with ground chicken and I skipped the casings because I’m all about the great, authentic taste but made fast and I must say, it was delicious.

What Is Merguez Sausage Made Of?

  • Ground Chicken
  • Garlic Cloves
  • Smoked Paprika
  • Kosher Salt
  • Granulated sugar
  • Ground Cumin
  • Ground Black Pepper
  • Ground fennel seed
  • Ground Coriander
  • Cayenne Pepper
  • Allspice

How To Make Merguez Sausage

  1. Mix all ingredients together and let it sit for up to 2 hours to get the flavors to meld.
  2. In a skillet over medium-high heat, heat 1-2 teaspoons of oil until it is hot.
  3. Wet your hands and make little 1 ounce patties with the sausage and cook until no longer pink in the middle.

Do These Meatballs Freeze Well?

These low carb meatballs freeze very well so they’re great for making up a batch and doing a quick meal prep with them.

I love, love, love tandoori chicken. My sleeve didn’t come with a “Chicken option” which is a silly way of saying Chicken thunks really hard for me. But the softer and more tender it is, the easier it seems to go down. Remember this is “bachelor cooking” week where I have to use short cuts since I’m busy and couldn’t cook this weekend. So I used a ready-made tandoori paste. No shame in it! I’ll post a recipe another day of making this one from scratch, but first I have to nom this one down.

In the picture below, I cook e d the tandoori chicken and my bacon-wrapped chicken at the same time to save myself a little effort and cleanup.

High Protein, Low Carb Tandoori Oven Baked Chicken

Ingredients

  • ▢ 4 Boneless Skinless Chicken Thighs
  • ▢ 2 tablespoon Full-Fat Greek Yogurt
  • ▢ 2 tablespoon ready-made tandoori paste

Instructions

  • Put all ingredients into a small, sturdy ziplock bag
  • Smoosh all ingredients together until everything is mixed well
  • Set aside overnight or for an hour. This helps the yogurt tenderize the chicken
  • Heat oven to 400 degrees
  • Line a baking sheet with foil and place a baking rack on top of the foil. This is important so that your chicken stays dry rather than soggy with the yogurt.
  • Place the chicken carefully on the rack and bake for 30 mins on one side. Flip over and cook for another 10 minutes until the chicken is cooked through
